2011 Martin Ray Cabernet Sauvignon

Martin-Ray-Cabernet-SauvignonAll of our Sonoma County Cabernet was harvested early in the cold mornings, then destemmed and moved to small, open top stainless steel tanks. There it fermented at moderate temperatures and macerated on the skins for an extended period of time. The wine was pressed off, settled 2 days and then racked to barrels for malolactic fermentation. This Cabernet spent 14 months aging in oak barrels and in tank; 45% new oak was used, half of that being American and half French oak.

From the Wine Maker – Classic aromas of ripe cherry, pipe tobacco, cedar, spice and cola lure the taster to candied cherry flavors, finishing with soft leather and rich blackberry and plum.”

Pair our elegant, yet approachable Sonoma County Cabernet Sauvignon with a gourmet hamburger or rack of lamb.

EDGE is a lush, complex Cabernet Sauvignon produced from grapes which were carefully selected from the great old vineyards in the Silverado Trail area of Napa Valley. The winemaking process follows traditional French winemaking practices with techniques including the use of cold soaking and extended maceration (averaging 23 – 32 day), and frequent pumping over. The 2011 vintage was aged in both French and American Oak for fifteen months, and barrels were racked once every six months.

2010 Aviary Napa Valley Red

Aviary-Napa-Valley-RedOur first wine was our 2010 vintage Napa Valley Red Wine.  A blend of 4 grape varieties from 8 different vineyards throughout the valley. The wide array of sources and grape varieties inspired the name.  Like an aviary full of exotic birds that capture one beautifully united experience, we imagine our wines to be a collection of vineyards and grapes that combine so that the whole is more than the sum of its parts.  Today, we contract with 11 distinct Napa Valley vineyards to make Aviary wines.

From the winemaker – Our 2010 Aviary Red Wine presents aromas of cherry, blackberry, tobacco, and black currant, reinforced by notes of truffle, nutmeg and subtle cinnamon. On the palate, this wine is lush and juicy, with a fleshy midpalate and soft, lingering tannins. Refined oak-inspired elements of cedar and walnut highlight the rich dark fruit flavors, giving them an enticing black cherry pie quality.

2008 Colosi Sicilia Rosso

Made from 100% Nero d’Avola, Colosi 2007 is a great, rich and generous everyday wine from Sicily. It has a ruby color with an expressive nose, quite intense with complex aromas of plum and dark cherries. Dry, medium bodied and well-balanced, the palate is fairly dense and earthy with ripe fruit flavors mixed with hints of spice. The overall profile of the wine is pleasant, friendly and versatile.

From the winemaker – “The color of this Sicilian gem is an intense dark ruby-red. The nose consists of aromas of black licorice, black currant, tar, tea leaf, and tobacco, which all develop into a fantastic and very complex bouquet while in the glass. Soft and ripe flavors of cherry, plum, and sweet tobacco followed into a nice smooth finish.”

2009 Chateau De La Huste Bordeaux

This blend of 90% Merlot – 10% Cabernet Franc was produced in France at the Chateau De La Huste family estate, owned by the Rulliers since 1860. The Chateau de la Huste’s vines are on one of the highest parts of Saillans. In old french, La Huste means the bump.

The grapes are picked by hand when they are fully ripe and put in baskets. Sorted minutely before and after full destemming. Fermentation in concrete tanks with built-in thermoregulation which guarantees better control of the fermentation process. Long vatting period (3 weeks) for a slow and gentle extraction of the phenolic agents. Malolactic fermentation in barrels. 12 to 15 months in new barrels (having matured 1 or 2 barches of wine). 20% of the barrels are replaced every year and toasting levels are selected for optimum enhancement of our wines’s fruit flavors.

Wine Spectator Review March 2012 Issue – “Subtle tobacco and roasted mesquite notes lead the way, followed by mulled plum and fig fruit and a fleshy but stylish finish that lets the fruit stretch out nicely.”

Great with rack or leg of lamb, lamb chops, roast pork, pork chops or tenderloin, or Parmigiano, Romano and other hard cheeses as well as cheddar and other savory, firm cheeses.
