2007 Pacific Rim “Vin de Glaciere” Riesling

Paired with Apple Crisp, Black Raspberry Sauce.

Andre’ — “This wine is consistently bright and fresh upon release. The 07 is aging well and has more pronounced flavors of dried apricot and honey. I think it is a great introduction to sweet, or as I like to say sticky wines. Some would put this in the Dessert wine category. It is also fantastic early in the meal with some pate’ or cured meats, or with a carmelized onion soup. For the event at St. Joes with the Growing Stage we are pairing it with the Apple crisp. The combination of flavors, apple, black raspberry and sweet riesling is electrifying. So, about that recipe. Slightly altered this is my Grandmothers Crisp Topping.

1 cup flour

1 cup brown sugar

8 ounces Butter cut into small pieces

Mix all of this together with your hands until it resembles a fine meal. Add

1 cup old-fashioned rolled oats

pinch of salt and cinnamon.

put this topping over prepared fruit and bake at 400 until golden brown.

“The Pacific Rim Vine de Glaciere is made from Riesling grown at the Selenium Vineyard, picked at about 22.5% sugar; the grapes are then frozen to concentrate the juice. The resulting wine is sweet with pear, melon, mango and honey notes and a kiss of horseradish-like spice and earthy clove. Riesling’s natural acidity helps balance the sugar.”

2010 Bella Sera Moscato

A nice Moscato that can be enjoyed with or without food. This moscato is well-balanced with plenty of fruit.

From the Wine Maker – “Sweet and refreshing flavors of ripe peach, apricot, and a hint of citrus. Off-gold, straw coloring Bouquet: Aromas of fresh nectarine and peach. Palate: Sweet and refreshing flavors of ripe peach and apricot. Finish: Crisp citrus fruit flavors on the finish.”

2010 Villa Rosa Moscato d’Asti D.O.C.G.

Moscato d’Asti is characterized by its freshness, elegant floral aromas and delicate flavors of peaches and apricots. It is generally fuller and more complex, though not as crisp, and is considered to display more finesse than its sibling Asti Spumante.

From the Wine Maker – “Naturally sparkling sweet wine. Color: straw yellow. Aroma: fragrant, typical of the Moscato grape. Taste: delicately sweet, aromatic and characteristic. Gastronomic matches: an ideal accompaniment for all desserts in particular biscotti, nougat, and fruit salads. Serving temperature: 68 degrees.”

best served with panna cotta with fresh fruit; summer fruit with turbinado sugar; simple cookies such as langue de chat, almond biscotti; creamy mild cheeses, including gorgonzola dolce; pound cake with fruit; puddings; zuppa inglese on chilled poached fruit; fruit tarts.
