2014 Chateau Ste. Michelle Columbia Valley Chardonnay

Chateau Dungeness Crab Cakes

Yield: Makes 24
Prep Time: 30 minutes
Cook Time: 20 minutes

INGREDIENTS
1 lb. Fresh Dungeness Crab, pick through to remove bits of shell, and squeeze the liquid out 2 Tbs. fine diced apple 2 Tbs. fine diced red pepper, squeeze to remove liquid 2 Tbs. fine diced yellow pepper, squeeze to remove liquid 3 Tbs. minced red onion ¼ c. mayonnaise ¾ c. plus 2 Tbs. bread crumbs 1 Tbs. chopped fresh tarragon 3 Tbs. vegetable oil Washington apple slaw, recipe follows.
INSTRUCTIONS
Mix the first five ingredients in a small bowl.  Add chopped tarragon and mayonnaise, mixing until completely incorporated.  Add ¼ cup plus 2 tablespoons of bread crumbs and mix thoroughly.  If the mixture doesn’t hold it’s shape, add a little more mayonnaise.  Divide into 24 equal portions and form into patties.  Chill for at least 30 minutes, then coat with remaining bread crumbs.

Heat a non-stick saute pan over medium heat, add oil, and place the crab cakes in the pan.  Cook until golden brown on each side, about 3-4 minutes.  Remove from the pan and place on heated serving plate.  Top each crab cake with some of the Washington apple slaw to serve.

2011 Antinori Chianti Classico Peppoli

Antinori-Chianti-Classico-PeppoliIntroduced in 1988 with the 1985 vintage, Pèppoli Chianti Classico DOCG is the archetypal modern Chianti Classico. In a departure from traditional Chiantis, Pèppoli combines the complexity and structure of a well-aged riserva with the fruity fragrance of a young wine. This style is made possible by a unique microclimate where east-northeast facing vineyards are planted in a small heat-retaining valley on mineral-rich rocky soils that are perfect for growing very fruity, lively Sangiovese. The wine further benefits from the use of better Sangiovese clones, severe grape bunch selection, delayed and cluster harvest when necessary.

From the Wine Maker – “Ruby red in color, the 2011 Pèppoli shows notes of cherries well-integrated with the chocolate and vanilla aromas of the oak aging. The palate shows much Sangiovese varietal character. The tannins are soft and silky, and the flavors are long and well sustained.”

The wine is delicious paired with cold starters, pasta, cheeses. Also perfect as a wine by the glass.

2013 Alamos Malbec

Alamos-MalbecThis wine has a full structure and a long, lingering finish. It has a spice and vanilla oak characteristic to it with floral notes which makes it a very drinkable wine now, or for years to come.

From the winemaker – “A classically Argentine wine, our Alamos Malbec blends the deeply concentrated plum flavors of the country’s signature variety – Malbec – with small portions of Syrah and Bonarda to add dark cherry and blackberry flavors. Well-integrated hints of brown spice and vanilla contribute layers of complexity.”

This wine pairs nicely with Chicken wings, barbecue, pate’s like chicken, duck or veal liver. It also goes with Hard cheeses like Asiago, Parmesan and Romano or semi-hard cheeses like Cheddar, Fontina, Gouda or Swiss.

2011 Be Riesling

be-rieslingRiesling is a white grape variety which originated in the Rhine region of Germany. Riesling is an aromatic grape variety displaying flowery, almost perfumed, aromas as well as high acidity. It is used to make dry, semi-sweet, sweet and sparkling white wines. Riesling wines are usually varietally pure and are seldom oaked. As of 2004, Riesling was estimated to be the world’s 20th most grown variety, an increasing trend, but in terms of importance for quality wines, it is usually included in the “top three” white wine varieties together with Chardonnay and Sauvignon Blanc.

2006 DaVinci Chianti

Well balanced and medium weight wine with flavors of ripe plums, cherries and red fruit. Lively with a soft mineral finish and round tannins that linger in a long peppery Finish. Lively, with plum, berry and a hint of milk chocolate on a simple, fruity palate. Delicious.

2006 San Giuseppe Chianti Classico Riserva

Ripe and fleshy, but bright and pure, with a damson plum note offsetting darker black cherry and currant fruit flavors. Shows lovely licorice snap and spice notes on the finish. Merlot, Cabernet Sauvignon and Cabernet Franc. — Wine Spectator

2011 Santa Cristina Umbria IGT

The “classic” Santa Cristina (a red wine) was produced by Marquis Niccolò Antinoir, father of Marquis Piero Antinori, in 1946. At more than 60 years from its date of original production, the constant commitment to high quality has made Santa Cristina an important reference point in the overall panorama of Italian wine. This dedication to quality and the constant search for innovative ideas and techniques led, in 2009, to the creation of a family of products united not only by a common name but above all by a common philosophy of production, one based on the indissoluble link between the vineyard and human hands.

From the winemaker – “Straw yellow in color, the wine is intense and complex in aroma with notes of bergamots, orange flowers, and sweet spices such as cinnamon. On the palate it is soft and savory, with a return of the aromatic notes of the nose on the finish and aftertaste.”

A perfect oyster wine, this great Italian wine is also delicious with many vegetarian dishes. Cheeses such as chevre and other fresh cheeses, Brie and other semi-soft cheeses, Swiss, Gouda and other mild, firm cheeses.

2009 Ecco Domani Chianti

Sangiovese is the main grape component of Chianti, one of Italy’s best known wines. Our Sangiovese grapes originate in the hills between the Provinces of Siena and Florence within the renowned Chianti area of Tuscany. This area is known for a warm, sunny growing season, with substantial temperature differential between day and night. Such conditions produce flavorful, rich grapes. The cultivation of these grapes can be traced back through the centuries to ancient Greece and Rome. In fact, the word Sangiovese is derived from Latin “sanguis Jovis,” or the blood of Jupiter.

From the Wine Maker – “Ecco Domani Chianti is a clear, ruby-red color, with a deeply fruited bouquet of cherries and fresh raspberries. This wine is lively and fresh on the palate, with soft, rounded tannins followed by a long, fine finish.”

The fresh, well-structured character of this wine makes it an ideal complement to all types of pasta, hors d’eouvres, and red or white meats.
