2014 Primarius Pinot Noir

Primarius Pinot Nior represents Oregon’s finest cool climate regions and are a true reflection of the state’s most famed varietal, Pinot Noir. Made up of 95% Pinot Noir and 5% Syrah.

From the Wine Maker – “This Pinot Noir is a blend of all of our vineyard sources throughout Oregon and is representative of one of Oregon’s great vintages. Aromatics suggest brambly cane berries and Bing cherries accented by some subtle notes of cinnamon and clove. The palate carries these aromas on and compliments them with lively acidity and just a hint of oak sweetness. The mouthfeel is round and pleasant and yields some further depth suggesting Morello cherries and nutmeg. The finish lingers with soft, silky tannins and leaves an aftertaste of sweet red and black fruits and Christmas spice.”

This wine pairs nicely with roast pork, pork chops, pork tenderloin, ham or mild sausage. Mild, firm cheeses like Swiss or Gouda.  Hard cheeses like Parmigiano or Romano and savory cheese like Cheddar.

2015 667 Pinot Noir

One of the newer French “Dijon” clones, 667 is best known for having much deeper color and more tannin than typical Pinot Noir, resulting in wines with great structure and black fruit flavors with spicy notes. We blend it with a small amount of other clones like 115, which doesn’t have as much structure but has extraordinary aromatics and enhances the nose.

Because the 667 Pinot Noir clone is naturally tannic and concentrated, winemaker James Ewart adopts careful vinification techniques to bring out its best. He cold soaks the crushed grapes (called “must”) for two to three days, using gentle pump-overs to bring out the color and flavor without extracting any bitter seed tannins. He also ferments it at cooler temperatures to lock in that deep color and flavor profile. In fact, he says, “I treat it more like a white wine.” After fermentation and aging in a combination of French and American oak, he blends in a few lots of additional clones that add specific aromatic qualities to the finished wine. This gentle care results in a balanced, cool-climate Pinot Noir that showcases clone 667’s concentrated flavors and supple tannins.

From the Wine Maker – “Noble Vines 667 Pinot Noir exhibits appealing aromas of black cherry, earth and a touch of vanilla. Plush tannins and balanced acidity support core flavors of ripe Bing cherry, bittersweet cocoa powder, and delicate hints of sage.”

667 Pinot Noir can be enjoyed on its own or with poached salmon, veal Parmesan, or grilled lamb.

2012 Sterling Vintner’s Collection Pinot Noir

Sterling-Vintner's-Collection-Pinot-NoirA majority of our fruit came from Edna Valley, a distinctive coastal region with a reputation for producing lovely, fruit-driven Pinot Noir. Located in San Luis Obispo, this unique valley is oriented east to west, drawing in the nearby marine breeze and creating one of the coolest and longest growing seasons in California. The long hang times translate to fruit with ripe tannins and elegant black cherry flavors. A small amount of fruit came from Monterey County, which provided brambly, berry-jam character. By using several vineyards, we were able to create depth and complexity in the wine.

From the winemaker – “Lifted aromas of cherry, blackberry, cocoa and sweet earthy notes open our Pinot Noir. On the palate, the expressive bright fruit evolves to darker blackberry jam, chocolate covered cherries and soft oak. Fine tannins lend velvety, lush texture as the flavors extend into a long, satisfying finish. Pair this inviting Pinot Noir with comfort foods, such as herb-roasted chicken or wild mushroom pasta.”
