2015 Horse Heaven Hills H3 Columbia Crest Cabernet Sauvignon

The vineyards in Horse Heaven Hills are the source and inspiration behind the H3 wines. The hills have been home to the Columbia Crest winery for more than two decades, and it is this heritage, combined with innovative winemaking and vineyard knowledge, that allow our winemaker to create wines that capture the unique terroir of the region.

From the winemaker – “This bold Cabernet opens with flavors of black cherries and blackberries with a touch of currants and vanilla, complemented by earth and mineral notes. Deep berry flavors lead to a soft tannin cocoa finish.”

Pairs well with cornish game hens, duck or turkey prepared in rich, hearty or heavy sauces or hard cheeses like Parmigiano or Romano and firm cheeses like Cheddar.

2012 Chateau Ste. Michelle Canoe Ridge Estate Cabernet Sauvignon

From the winemaker – “The Canoe Ridge Estate Cab is a beautifully balanced wine that offers a classic expression of Horse Heaven Hills fruit. The wine delivers red fruit flavors, earthy spice notes wrapped in silky, elegant tannins. A warmer growing season in 2012 was a return to the “classic” Washington vintage, with ideal conditions for fruit ripening.”

This wine pairs nicely with Roast Beef, steak, steak prepared with dark and hearty sauces or red wine sauces, beef stew, short ribs, Beef Stroganoff and Beef Wellington.

2011 Bridlewood Estate Blend 175

Bridlewood-Estate-Blend-175At Bridlewood, we like to take our time. We hand select our grapes from California’s vast Central Coast AVA, and we pour our passion into winemaking. Our tasting room sits on a picturesque 105-acre estate which rests on a high bench of ancient seabed, facing the Pacific breezes that meander through the Santa Ynez Mountains to the south and the Purisima Hills and San Raphael Mountains to the north. Days are warm, nights are cool and the abundant sunshine is tempered by wind and fog. This is Central Coast Wine Country at its best.

From the winemaker – “Handcrafted from a blend of Central Coast vineyards in the Santa Ynez Valley, Paso Robles and the Edna Valley, we tasted the different lots 175 times before we blended them together, a practice that lent itself to the naming of this wine. A well-balanced expression of the Central Coast region, the final blend is comprised of Syrah, Cabernet Sauvignon, Petite Sirah and Viognier. This full-bodied blend’s dark, jammy fruit flavors and rich, soft tannins are framed nicely by notes of sweet oak and end with a graceful, lingering finish.”

2012 William Hill Cabernet Sauvignon

Varietal Content: 90% Cabernet Sauvignon, 7% Petit Verdot, 3% Petite Sirah, 1.5% Cabernet Franc

2011 Martin Ray Cabernet Sauvignon

Martin-Ray-Cabernet-SauvignonAll of our Sonoma County Cabernet was harvested early in the cold mornings, then destemmed and moved to small, open top stainless steel tanks. There it fermented at moderate temperatures and macerated on the skins for an extended period of time. The wine was pressed off, settled 2 days and then racked to barrels for malolactic fermentation. This Cabernet spent 14 months aging in oak barrels and in tank; 45% new oak was used, half of that being American and half French oak.

From the Wine Maker – Classic aromas of ripe cherry, pipe tobacco, cedar, spice and cola lure the taster to candied cherry flavors, finishing with soft leather and rich blackberry and plum.”

Pair our elegant, yet approachable Sonoma County Cabernet Sauvignon with a gourmet hamburger or rack of lamb.

2012 Beringer Knights Valley Cabernet Sauvignon

Beringer-Knights-Valley-Cabernet-SauvignonLocated 17 miles northwest of the winery, Knights Valley vineyard is approximately 600 acres, and has rocky, well-drained soils that are perfectly suited to Cabernet Sauvignon, Sauvignon Blanc, Semillon, Merlot, Cabernet Franc and Petit Verdot. Grapes for the 2011 Knights Valley Cabernet Sauvignon were harvested between October 2nd through October 28th.

From the winemaker – “The 2012 Knights Valley Cabernet Sauvignon has aromas of dark blue fruits and spices. Notes of cassis, sweet licorice and a juicy core of fruit are balanced by nice acidity and a silky, lingering finish.”

This wine pairs nicely with Pasta with Meat, Bolognese or ragu sauces, meat lasagna. Hard cheeses like Parmigiano or Romano and firm cheeses like Cheddar.

2010 St. Francis Cabernet Sauvignon

Each carefully selected vineyard contributes distinctive and individual qualities to the finished wine.”

2013 Dreaming Tree North Coast Cabernet Sauvignon

When Steve Reeder and Dave Matthews first met, they realized they had a few things in common, like a passion for making wine at least as strong as their passion for drinking it.

They set out into wine country, looking for a way to make quality wines accessible to everyone. Along the way, they found inspiration in the down-to-earth characters and unforgettable flavors that give the region its rare kind of charm.

From the Wine Maker – “When you’re working with Dave, you want to make sure whatever you’re doing has soul. The rhythm of our North Coast Dreaming Tree Cabernet Sauvignon highlights classic aromas of blackberry, cherry and herbal notes wrapped by toasted vanilla. It’s an easy-drinking wine with a lot of character. —Steve Reeder.”

Vietnamese style grilled ribs and jasmine rice

Serves 4

Ingredients

  • 2 lbs baby back pork ribs
  • 4 cups chicken stock
  • 1 cup soy sauce
  • 1 cup seasoned rice wine vinegar
  • 3 tablespoons garlic, minced
  • 3 tablespoons ginger, minced
  • 2 tablespoons hoisin sauce
  • 2 tablespoons garlic chili paste
  • 1 tablespoon Chinese five-spice powder
  • Jasmine rice (recipe below)

Directions

  1. Pre heat your oven to 300°F.
  2. Add chicken stock, soy sauce, rice wine vinegar, garlic and ginger into a sauce pan and bring to a boil.
  3. Cut ribs into two piece sections and place in one layer in an oven proof baking pan.
  4. Pour sauce over ribs and back in oven for 1 ½ hours or until meat peels from the bone.
  5. Remove ribs from pan and set aside.
  6. Pour sauce into a small pot. Cook over high heat and reduce liquid by half.
  7. Add hoisin sauce, garlic chili paste and Chinese five-spice powder. Season with salt if needed.
  8. Finish ribs on the grill regularly basting with the sauce and turning about every 7 minutes until cooked through and browned.
Serves 4
  • 2 cups Jasmine rice
  • 4 cups water
  • 1 tablespoon salt
  • 1 piece star anise
  • 3 pieces clove
  • 3 pieces cardamom pods
  • 1 tablespoon Szechuan peppercorns
  • 1 cinnamon stick

Jasmine Rice Directions

  1. Place all spices in a small sauté pan and toast over low-medium heat until fragrant about 3 – 5 minutes.
  2. Remove from heat and create a sachet to hold spice mixture using cheesecloth tied with cooking string.
  3. Place water in sauce pan, add spice sachet and bring to a boil. Add a pinch of salt.
  4. Add rice, cover pan and lower to a simmer.
  5. Cook until done about 15 – 18 minutes.
