2012 Cupcake Vineyards Red Velvet

Cupcake Red Velvet is a blend of 47% Zinfandel, 29% Merlot, 19% Cabernet Sauvignon, and 5% Petite Sirah grapes, each variety contributing to the structure, aroma, depth of flavor, and finish.

From the Wine Maker – “Red Velvet shows an incredible nose of chocolate, deep rich blackberries, red fruits and a creamy mocha finish that is unmistakable in its intensity and length. Our Red Velvet is a blend of Zinfandel, Merlot and Cabernet Sauvignon. It’s reminiscent of a blackberry chocolate cupcake with a mocha coulis.”

Enjoy with sweet and spicy Hoison steak, a barbecue bacon cheese burger or even dark chocolate fondue.

2013 Santa Cristina Chianti Superiore

The two grape varieties (95% Sangiovese, 5% Merlot) of the blend were fermented differently: the Merlot was given seven to eight days of skin contact at maximum temperatures of 79°  in order to extract only supple tannins and preserve the fruity character of the grape’s aromas, while the Sangiovese was given a longer, ten to twelve day maceration on its skins at higher temperatures, 86° which included a soft punching down of the cap of skins in order to increase the complexity of the wine’s flavors and aromas. Ageing took place both in stainless steel tanks and in oak for a total aging period of nine months, followed by a short, two months period of bottle aging before commercial release.

From the Wine Maker – “Ruby red with purple highlights, the wine features aromas of red fruit, particularly cherries and black currants, together with hints of vanilla from the aging in oak. The palate is balanced and with polished tannins, and the red fruit returns on the finish and aftertaste.”

Recipe: Crostino di Polenta e Funghi

Ingredients:
200g Polenta
800ml Water
40g Dried mushrooms
100g of Fresh pecorino Toscano
8 Slices of rustic bread

Rehydrate the mushrooms in tepid water and chop into small pieces. Boil the water for the polenta and when ready gradually add the polenta flour along with the chopped porcini and keep stirring until ready. Once cooked, spread onto a rectangular baking pan, keeping the thickness at least 1 cm. Place the polenta in the refrigerator to cool and solidify.Cut the pecorino into small cubes. Cut the fully cooled polenta into small disks and place the cheese on top.

Place in the oven for 5 min at 180°  C and serve hot. *Every polenta has different cooking time and water/flour proportion specific to its particular brand. Consult the directions on the packaging to ensure the best result.

2012 25 Lagunas Estate Grown Malbec

Centuries ago, in the Huanacache region of San Juan, there was a chain of 25 interconnected lagoons that were inhabited by the indigenous Huarpe tribes who traveled in small canoes called “Lagooners.” These lagoons have long since dried up, and in doing so changed the hard land into a renowned viticultural region. Finca Rewen, the winery that produces 25 Lagunas, has an estate vineyard located at 2,000-foot elevation, near the foothills of the Andes Mountains. San Juan is an arid wine region, known for having intense sun, and is ideal for producing warm climate varietals. It is practically uninhabited, with vast expanses of vineyards that take their irrigation from the crystal clean runoff of the nearby Andes.

From the Wine Maker – “The color is an intense red with violet hues. With aromas of Ripe red plum, red currants and strawberry. The palate shows raspberries, prunes and soft tannins with a medium length finish.”

This Melbec is best served with baked, barbecued, broiled or roasted chicken, Chicken Cacciatore, chicken in mushroom or red wine sauce, chicken marinated in herbs and grilled, Coq au vin. Hard cheeses like Asiago, Parmesan and Romano or semi-hard cheeses like Cheddar, Fontina, Gouda or Swiss.

2012 Ghost Pines Merlot

ghost-pines-merlotEmploying dual County appellation sourcing for Ghost Pines Merlot 2012, our winemaker was able to blend a wine which accentuates the best of what Napa and Sonoma Merlot has to offer. Napa County Merlot provides lush, jammy, ripe fruit into the blend in a free-spirited manner. The Sonoma County Merlot adds fresh red and black fruits along with a strong structural foundation in a disciplined manner. The result is a wine that exhibits the best of both appellations.

From the Wine Maker – “Our Merlot is a culmination of the best that Napa and Sonoma have to offer. This wine opens with aromas and flavors of plum, dried cherry and blackberry. On the palate, hints of nutmeg, clove, new leather and toasted bread create an expressive, full-bodied wine.”

This wine is best served with soups that contain hearty vegetable stews, chicken stock with meats, hearty meat-based stews or meat stock with vegetables.

2006 La Cattura Toscana

This Tuscan Cru has received great appreciation for its originality and freshness. It stands out with positive judgement from the wine-tasting commission organized by the Province of Pisa to rate the wine that aspire to the new DOC Terre di Pisa.  This wine, which name has been inspired by the annual capture of wild hares bred in the natural setting of the vineyards, is the expression of an organic agriculture that has renounced to any product or procedure damaging nature, rediscovering the great values of an antique vine-growing process. The wine is made with a selection of Teroldego and Syrah grapes and refined for 12 months in oak barrels.

From the Wine Maker – “Purple red colour, on the note is shows notes of red berries, blackberries and hints of white pepper; in the mouth it is medium-bodied, fresh, velvety with well-integrated tannins.”

Serve with mediterranean pasta dishes, poultry and vegetable soups.

2009 Chateau de L’Estang Bordeaux

Chateau-de-L'Estang-BordeauxBordeaux wine labels can be confusing. Basically, a Bordeaux wine is any wine produced in the Bordeaux region of France; which is the largest source of fine wine in the world. Chateau de L’Estang is found in Cotes de Castillon (in the southwest of France) and its Bordeaux is a blend of Merlot, Cabernet Franc, and Cabernet Sauvignon.

Robert Parker– “Another sleeper of the vintage, the opaque ruby/purple-tinged 2009 l’Estang exhibits lots of sweet black currant and black cherry fruit intermixed with a hint of vanillin. Medium to full-bodied, with surprisingly pure, concentrated, lengthy flavors, it should drink well for 5-6 years.”

Great with rack or leg of lamb, lamb chops, roast pork, pork chops or tenderloin, or Parmigiano, Romano and other hard cheeses as well as cheddar and other savory, firm cheeses.

2009 Palistorti di Valgiano Red Wine

This red blend is made up of 70% Sangiovese, 15% Syrah, and 15% Merlot. This bottling shows terrific harmony. Anticipated maturity: 2012-2019.

From the Wine Advocate– “The 2009 Palistorti di Valgiano is a beautiful, radiant wine graced with exquisite finesse in its dark red fruit. It shows compelling inner palate sweetness, with more than enough minerality to balance some of the vintage’s riper qualities. Vintage 2009 was characterized by warm, hot weather until a big storm hit in mid-September.”
