2009 Chateau de L’Estang Bordeaux

Chateau-de-L'Estang-BordeauxBordeaux wine labels can be confusing. Basically, a Bordeaux wine is any wine produced in the Bordeaux region of France; which is the largest source of fine wine in the world. Chateau de L’Estang is found in Cotes de Castillon (in the southwest of France) and its Bordeaux is a blend of Merlot, Cabernet Franc, and Cabernet Sauvignon.

Robert Parker– “Another sleeper of the vintage, the opaque ruby/purple-tinged 2009 l’Estang exhibits lots of sweet black currant and black cherry fruit intermixed with a hint of vanillin. Medium to full-bodied, with surprisingly pure, concentrated, lengthy flavors, it should drink well for 5-6 years.”

Great with rack or leg of lamb, lamb chops, roast pork, pork chops or tenderloin, or Parmigiano, Romano and other hard cheeses as well as cheddar and other savory, firm cheeses.

2009 Dom Bunan Mas De La Rouviere Bandol Rose

Direct pressing of whole crushed grapes. Harvested from September to mid-October. Fermentation lasting from 11 to 17 days in stainless steel vats. Blended in late January, and bottled in May before maturing in air-conditioned cellars.

From the winemaker – “The Dom Bunan Rose is a blend of Mourvedre, Cinsault, and Grenache. A beautiful pale salmon hue in the glass, the wine has wonderful aromas of white peppered raspberries and strawberries. On the palate the Dom Bunan has flavors of spiced tropical fruit with a slight smidge of strawberries and bananas.”

2009 Stackhouse Cabernet Sauvignon

This Cabernet is sourced from the Nappa Valley and made up of 86% Cabernet Sauvignon, 12% Petite Sirah, 1% Merlot, 1% Cabernet Franc. It was aged for 21 months in 100% French barrels (30% new/70% used).

From the winemaker – “The 2009 Stackhouse Cabernet Sauvignon has attractive aromas of raspberry, blackberry, graphite and spring flowers. This medium-bodied wine is elegant and has a beautiful upfront appeal.”

Best served with panna cotta & fresh fruit; summer fruit with turbinado sugar; simple cookies such as langue de chat, or almond biscotti.

Fizz 56 Brachetto Spumante

2009 Ecco Domani Chianti

Sangiovese is the main grape component of Chianti, one of Italy’s best known wines. Our Sangiovese grapes originate in the hills between the Provinces of Siena and Florence within the renowned Chianti area of Tuscany. This area is known for a warm, sunny growing season, with substantial temperature differential between day and night. Such conditions produce flavorful, rich grapes. The cultivation of these grapes can be traced back through the centuries to ancient Greece and Rome. In fact, the word Sangiovese is derived from Latin “sanguis Jovis,” or the blood of Jupiter.

From the Wine Maker – “Ecco Domani Chianti is a clear, ruby-red color, with a deeply fruited bouquet of cherries and fresh raspberries. This wine is lively and fresh on the palate, with soft, rounded tannins followed by a long, fine finish.”

The fresh, well-structured character of this wine makes it an ideal complement to all types of pasta, hors d’eouvres, and red or white meats.

2006 Left Coast Cellars Cali’s Cuveé Pinot Noir

From the Wine Maker – “The biggest, boldest Cali’s to date, this wine offers up a hedonistic nose of cherry, brambly blackberry, pine, orange peel and cinnamon to awake your senses. A truly unforgettable palate suggests raspberries and blackberries with an allusion to wild mint and thyme. A wonderful glass to sip own its own, this wine has just the right amount of acidity and structure to compliment robust lamb, beef and game dishes.

Given extra bottle age, this is drinking optimally at the moment, with a spicy, brambly nose mixing blackberries, mint and chocolate-covered cherries. 2007 Three Saints Pinot Noir

The Dierberg Vineyard is situated atop a sandy loam mesa above the South Bank of the Santa Maria River. The ranch features a series gently rolling hills and soils that are uncharacteristic of the growing area. The higher loam content and slightly heavier texture of our soil tends to produce Pinot Noirs that are more powerful in structure and more savory in flavor-profile than is typical for the Santa Maria Valley.

From the Wine Maker – “Our most overtly fruity and exuberant Three Saints Pinot to date, the 2007 shows bright blackberry, crushed raspberry and subtle black tea notes. On the palate the wine is both vibrant and luxuriously rich, with decadent creamy blackberry flavors underpinned by satiny tannins and a blast of fresh acidity. Although our 2007 Three Saints Pinot will age well for up to three years, it would be a shame not to drink it now for its almost primal sense of gratification.”

A great complement to wild salmon. Also try with roasted duck, grilled lamb, mushrooms, and medium cheeses.

2009 Dreaming Tree Crush (Red Blend)

When Steve Reeder and Dave Matthews first met, they realized they had a few things in common, like a passion for making wine at least as strong as their passion for drinking it.

They set out into wine country, looking for a way to make quality wines accessible to everyone. Along the way, they found inspiration in the down-to-earth characters and unforgettable flavors that give the region its rare kind of charm.

Grilled Rack Of Lamb With Salsa Verde

Serves 4

Ingredients

  • Two 7 to 8 bone racks of lamb, trimmed and Frenched (the butcher can do this)
  • ¼ cup fresh thyme, roughly chopped
  • 2 tablespoons freshly ground black pepper
  • 3 tablespoons kosher salt
  • ¼ cup olive oil
  • Salsa verde

Directions

  1. Preheat your grill so you have a hot flame.
  2. Combine thyme, pepper and salt.
  3. Drizzle olive oil onto the lamb and coast evenly with your hands.
  4. Coat the lamb with the herb mixture evenly.
  5. Oil the grill rack and lay the racks of lamb on it. Grill turning once or twice, until nicely browned on all sides. Be mindful that the fat on the lamb can drip and cause the flame to flare; if this happens, simply turn the lamb over or move it away from the hottest flames.
  6. Reduce the flame to low, cover the grill and cook the lamb in a cooler part of the grill until done. Lamb from the rack is best served medium-rare (130°F).
  7. Let the lamb rest for a few minutes. Cut into chops, or serve the half-racks as they are.
  8. Serve with salsa verde on the side.
  • 1 ½ shallots, minced
  • ¼ cup red wine vinegar
  • ½ bunch fresh mint, stems removed
  • ½ bunch fresh parsley, stems removed
  • ¼ bunch fresh oregano, stems removed
  • ¼ cup capers (rinsed if packed in salt and chopped roughly)
  • 2 cups oil (1 cup canola, 1 cup extra virgin olive oil)
  • ¼ teaspoon salt

Salsa Verde Directions

Makes 2 cups – Also goes great with grilled beef, pork or chicken!

  1. Marinate shallots in vinegar for 30 minutes in a small bowl.
  2. Place herbs, oil mixture and salt in a blender or food processor and puree until smooth. Place in a bowl.
  3. Strain shallots and add to herb mixture.
  4. Add the chopped capers and stir to combine. Season to taste.

Rosenblum Cellars Vintners Cuvée XXXIII Zinfandel

Similar to many European wines, the Rosenblum Zinfandel Cuvée XXXII doesn’t carry a specific vintage, allowing the winemaker to create a blend that reflects his ideal wine style. The result is a well-balanced, multilayered wine that can be enjoyed immediately upon release.

Sweet mocha and vanilla spices gather around red stone fruits on the medium-bodied palate. The well-balanced acidity and fine tannins showcase the vibrancy of flavors in this accessible wine.”

A wine suited for all occasions, it pairs well with barbecued meats, pizza or pastas.

2010 Primal Roots Red Blend

The true essence of Primal Roots begins with the raw qualities of Merlot, Syrah, and Zinfandel that are artfully blended to create a smooth, full-bodied, sensual wine. 43% Merlot, 37% Syrah, and 20% Zinfandel make up the great blend while oak aging helps build the structure introducing the underlying vanilla, cream, and mocha characteristics.

From the Wine Maker – “The 2010 Red Blend has aromas of mocha, vanilla, and spice that give way to a silky texture along with rich flavors of raspberries and chocolate that are truly uninhibited.”

Pairs well with grilled marinated chicken, chicken with medium sauces like red wine or teriyaki, chicken with hearty sauces like spicy Italian, mushroom, cornish hen, duck with light to hearty sauces, turkey with light to hearty sauces.
