2014 Talbott Kali Hart Chardonnay

Minimal winemaker influence allows Kali Hart Chardonnay to showcases the strength of Talbott’s estate vineyards. The rich, inviting nose shows bright tropical notes that continue on the palate, where refreshing flavors of pineapple and honeydew are complimented by refreshing acidity. A generous mid-palate leads to a long citrus and tropical fruit finish with hints of French oak and minerality. Kali Hart Chardonnay is named after Robb Talbott’s youngest daughter.”

This Chardonnay is an excellent accompaniment for fish, poultry and lightly sauced entrees. Semi-hard cheeses like Fontina, Jarlsberg, Swiss or Gouda.

2015 Apothic White Winemakers Blend

Apothic-White-Winemakers-BlendApothic, named for the mysterious place, Apotheca, where vintners stored their most coveted concoctions in 13th century Europe, Apothic blends fuse Old World intrigue with modern sophistication. The grapes for Apothic White were pressed and allowed to settle before racking. The must was fermented in upright tanks at cool temperatures to maintain and enhance the natural aromas and flavors. A portion of this wine underwent malolactic fermentation to soften the mouthfeel.

From the Wine Maker – “Our latest release brings tropical aromas and flavors together with hints of spice, creating an enchanting white blend. Apothic White is an approachable blend that combines Chardonnay, Riesling and Moscato to create a luscious, vibrant wine in the bold style of Apothic. Intense flavors of peach, pineapple, honey and vanilla spice make this smooth white blend unforgettable.”

This wine pairs deliciously with fruit salad, sushi, white fish (snapper, grouper, scallops), as well as Cantonese, Thai, and Latin cuisines.

2013 446 Chardonnay

Throughout centuries of cultivation, winegrowers have paid close attention to their vines, watching for beneficial changes as the plants adapted to their site and growing conditions. They selected those with exceptional attributes and propagated them by cuttings from the original vine into the vine types we call “clones”: genetically identical vines that are prized for specific characteristics. Bud break, berry color, disease resistance, soil or climate suitability, cluster size, yield, flavors, aromas and how the grapes ripen are just some of the many traits that can be managed through careful clonal selection and cultivation.

Clones perform at their best when they are put to work in the type of soil and climate from where they originated. Chardonnay favors cool conditions, and Monterey’s coastal climate — with afternoon breezes, evening fog and a long growing season—is perfect for growing excellent Chardonnay grapes. Clone 4 does especially well in Block 46 of our San Bernabe Vineyard, which is in one of the coolest growing regions in California.

From the Wine Maker – “446 Chardonnay exhibits appealing aromas of golden delicious apple, ripe apricot, pineapple and melon. Medium-bodied with a creamy mid-palate, this delightful wine offers flavors of peach and hints of toasty vanilla spice.”

446 Chardonnay can be enjoyed on its own, or with soft cheeses, roast fowl and baked yams.

2010 Backhouse Chardonnay

Easily the best Chardonnay in California at this price. It shows creamy, vibrant flavors of pineapples, green apples, buttered toast and buttered popcorn.

From the Wine Maker – “The 2010 Chardonnay is golden in color with flavors of tropical fruits on the palate. Crisp and clean, this wine can be enjoyed with lighter fare such as fish and poultry dishes or as an aperitif.”

This wine is best served with grilled or saute’ed pork chops, pork tenderloin, grilled or saute’ed veal, veal marsala, scallopine or roasted veal.

2009 Ruca Malen Yauquen Chardonnay

This Chardonnay is forward in style, with lightly toasty, creamy aromas that accent baseline apple and tropical fruit scents. This wine exposes a citrus corner that balances its tropical fruit. A hint of fresh herbs and minerals articulate a well-balanced delicious wine.

From the Wine Maker – “Yellow with bright green hues. In the nose it shows, floral notes, pears and pineapple. In the mouth it is fresh and sweet, with a very well-balanced acidity. Persistent and aromatic after taste.”

Best with grilled or sautéed pork chops, pork tenderloin, grilled or sautéed veal, veal marsala, scaloppini or roasted veal. Cream style cheeses like cottage, cream cheese, or fromage blanc, mozzarella, semi-hard cheeses like mild Cheddar, Fontina, Jarlsberg, Swiss or Gouda, soft rind cheeses like Brie.

2010 Cellar No. 8 Chardonnay

From the winemaker – “This Chardonnay shows characteristics of tropical and citrus fruit flavors, lemon, pineapple and sweet white peach. These flavors continue on a lush, juicy palate dominated by clean citrus flavors. Some aging in French oak gives the wine additional depth of flavor and a creamy, refreshing mouthfeel.”

Corn Chowder with Seasonal Mushrooms and Crab Garnish

Ingredients

  • 1 cup (about 5 ounces) pancetta, cut into 1/4-inch dice
  • 2 tablespoons olive oil
  • 1 1/2 cups onion, finely chopped
  • 1 1/2 cups leeks, finely chopped
  • 3/4 cup celery, finely chopped
  • 3/4 teaspoon fennel seeds
  • 1 3/4 pounds new or red-skinned potatoes, peeled and diced into 1/2-inch cubes
  • 4 cups good-quality chicken stock
  • 3 cups half and half or whole milk
  • 3 cups corn kernels
  • 2 tablespoons butter
  • 1/2 pound seasonal mushrooms (chanterelles, morels, or crimini) thickly sliced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon thyme
  • 1/2 pound crabmeat
  • 2 tablespoons parsley, chopped

Directions

  1. Heat oil in a large pot over medium heat. Add pancetta and sauté until crisp, about 8 minutes. Transfer to a plate lined with paper towel and allow to drain.
  2. Pour off all but 3 tablespoons of the pan drippings. Add onion, leeks, celery, and fennel seeds to pot. Sauté until vegetables are tender, about 5 minutes. Stir in potatoes. Add cream and stock and simmer-stirring occasionally-about 10 minutes, until potatoes are almost tender. Add corn and simmer another 5 minutes or so, until potatoes become tender.
  3. Meanwhile, melt butter in a skillet over medium heat. Add mushrooms and sauté until tender, about 5 minutes. Stir in vinegar and thyme. Add this mixture to the chowder. Season to taste with salt and pepper.
  4. Sauté crabmeat in mushroom skillet over medium heat until heated through, about 3 minutes.
  5. Place a heaping tablespoon of pancetta at bottom of each serving bowl and ladle chowder over. Garnish with crabmeat and parsley. Serve immediately.

2009 Yalumba Unwooded Chardonnay

2009 Yalumba Y Series Unwooded ChardonnayThis wine is light, fresh and crisp for a chardonnay at this price. It has a very nice floral perfume mixed with mandarin and peach with a lemon zest finish.

From the winemaker – “Pale straw with light green hues, the Yalumba Y Series Unwooded Chardonnay displays aromas of honeydew melon and nashi pear, with hints of grapefruit and pineapple. The palate is silky with flavors of ripe nectarines, guava and grapefruit with a fresh acid finish.”

This wine pairs nicely with Thai chicken salad or gnocchi with sautéed prawns and a burnt butter sauce.

2010 Robert Mondavi Private Selection Chardonnay

In 2010, our Central Coast Chardonnay grapes enjoyed an extended period maturing on the vine, which produced fruit with impressively concentrated flavors. The natural roundness of our Chardonnay was enhanced by partial barrel and malolactic fermentation coupled with extended aging on the yeast lees, resulting in a luscious, complex wine. The blend is made up of 98% Chardonnay, 1% Muscat Canelli, 1% Malvasia Bianca.

From the Wine Maker – “The nose reveals lemon blossom, pineapple, and peach aromas with smoky oak nuances along with enticing vanilla spice and toasty brown sugar flavors. The creamy, mouthfilling palate creates a lush impression and is balanced by a rich, lingering finish.”

Enjoy this delicious wine with rich seafood, poultry and pork dishes, white-sauce pastas – like fettuccine Alfredo, or flavorful, soft ripening cheeses.

2008 Taz Chardonnay

This is a moderately aromatic Chard with notes of toasty oak, butter, vanilla, a little pineapple and butterscotch. Dry, full-bodied, medium acidity, with flavors of ripe pear, and a slight touch of minerality and meyer lemon with some creaminess on the finish. The oak gives way on the nose after being open a few minutes and comes through more on the palate.

From the Wine Maker – “The TAZ Santa Barbara Chardonnay is 100 percent barrel fermented in French oak (19% new), and undergoes a partial malolactic fermentation. I like the wine to have nice viscosity and mid-palate weight, but my main goal is to preserve the natural acidity and tropical fruit that has put Santa Barbara County Chardonnay on the map. This wine opens with aromas of lemon chiffon, pineapple and toasted coconut. The wine is creamy, but balanced with a refreshing acidity and lengthy finish.”

This wine is excellent with pasta in light wine sauce like lemon-flavored olive oil or spicy Asian noodles. It also goes well with caesar or green salads with light to medium dressings.

2009 Chateau Souverain Chardonnay

Superb fruit, eight months of oak aging, and lees-stirring have created a rich wine with intense notes of pear and nectarine.

From the Wine Maker – “Peach, pear and pineapple fill the nose of this Chardonnay. On the palate the wine is creamy and round with luscious flavors of lemon and pear that harmonize with notes of vanilla bean and spice. The wine has bright acidity and long, lingering finish.”

Great with appetizers such as; baked goat cheese, smoked fish or shellfish, oysters on the half-shell and escargots that are sautéed with garlic.
