2010 Aquinas Chardonnay

Aquinas-ChardonnayFrom the Wine Maker – “Our barrel-fermented Chardonnay has room-lling aromas of vanilla and Bartlett pear, with American oak and a touch of clove and Gerbera daisy. On the palate, tropical and stone fruit avors of lychee and light pluot are complemented by a touch of toasted oak. The mouthfeel is a wonderful contrast between the richness from French and American oak fermentation and an angular, dened acidity. Picked early in the season, the Napa Carneros portion of this wine lends unexpected freshness to the smooth, creamy Napa Valley lot aged in new French oak. The nish is especially complex; it is light and refreshing, while simultaneously silky with lingering vanilla notes. Overall, this Napa Valley Chardonnay shows great balance, and the depth of avors makes it an excellent food wine.”

Half of this wine was barrel fermented in new French and American oak, while the other half was fermented in used French and American oak barrels; this balance of new and used oak created just the right amount of creaminess and complexity without overwhelming the fruit prole. In addition, sur lie aging, battonage, and 60% malolactic fermentation added additional texture and nuance. Serve this wine with grilled chicken, barbecued shrimp, or mahi mahi. In addition, this wine’s structure makes it the perfect wine to break down food pairing rules and serve with red meat, such as grilled lamb burgers and feta cheese.

From the winemaker – “This chardonnay shows an intriguing array of aromas from vanilla bean and toasted hazelnuts, to lemon Verbena. Crisp flavors of green apple and biscotti contrast with hints of grapefruit, toasted marshmallow, and fresh lime on the finish. A bit of aging on American Oak, adds depth and complexity furthering this wine’s broad stylistic appeal.”

2008 McManis Family Vineyards Cabernet Sauvignon

With lots of dark berry fruit, the palate has a richness and density that is supported by mouth coating soft tannins and a milk chocolate oak finish.

From the Wine Maker – “The 2008 Cabernet Sauvignon has a purple-red color with good depth and bright youthful hues. The aromas feature ripe blackberries, fresh boysenberries and plums. The wine’s bouquet delivers cocoa powder, hazelnuts with a hint of smoke. On the pallet, flavors of succulent juicy olallie berries and creamy vanilla predominate and are joined by a waft of juniper. The flavors are supported by well integrated tannins that contribute to a long, smooth, and elegant finish.”

Enjoy with Cornish game hens, duck or turkey prepared in rich, hearty or heavy sauces. Hard cheeses like Parmigiano or Romano and firm cheeses like Cheddar.
