2015 Apothic Red Winemaker’s Blend

apothic-redApothic is a true original. Named for a mysterious place, Apotheca, where vintners stored their most coveted concoctions in 13th century Europe, Apothic blends fuse Old World intrigue with modern sophistication. Winemaker Boyd Morrison lets the character and flavor of each varietal guide the shape of his wines. Apothic offers a portfolio of enchanting blends that are bold in style and taste.

From the winemaker – “In 2015, Apothic Red was crafted from a blend of primarily Zinfandel, Syrah, Merlot and Cabernet Sauvignon. These varieties come together seamlessly for a fruit-driven wine with fresh dark fruit flavors and jammy red fruit notes. The Zinfandel offers bold dark fruit flavors and spicy notes, complemented by the soft mouthfeel of Merlot. The Syrah adds layers of smooth blueberry, while the Cabernet Sauvignon delivers ripe fruit flavors and a firm structure. This decadent blend is framed by hints of oak, vanilla, and mocha.

This bold vintage should be served with wild game meats like; squab, pigeon, dove, pheasant, venison (deer), buffalo, boar and ostrich. Hard, savory cheeses like Parmigiano, Romano and Cheddar.

2013 Cakebread Cellars Sauvignon Blanc

Cakebread-Cellars-Sauvignon-BlancWe source Sauvignon Blanc grapes from throughout Napa Valley,  with over a third of the total coming from our estate vineyards in Rutherford, Calistoga,  Carneros and southeastern Napa.  The wonderful  fruit from these sites enables us to produce a full-bodied, crisp and complex  Sauvignon Blanc boasting distinctive varietal character and a delectably zestiness.   In 2012, a superb white wine vintage in  Napa Valley, we blended 87% Sauvignon Blanc with 9% Semillon (to enrich the wine’s  mid-palate and soften its acidity) and 4% Sauvignon Musqué, an aromatic clone of Sauvignon Blanc that adds a  bright, floral note to the bouquet.

From the Wine Maker – “Because of the stability of our grape sources and constancy of our winemaking regimen, our sauvignon blanc displays a consistent style from year to year. The 2013 vintage boasts characteristically fresh, pure and complex white grapefruit, guava, green apple, honeydew melon and mineral aromas. It’s concentrated; guava, gooseberry and melon flavors persist into a long, lively finish boasting bright citrus, light spice and mouth-watering mineral tones. Enjoy this beauty over the next 3-5 years with your favorite salad, seafood, poultry and veggie dishes.”

A perfect oyster wine, this Sauvignon Blanc is also delicious with many vegetarian dishes. Cheeses such as chevre and other fresh cheeses, Brie and other semi-soft cheeses, Swiss, Gouda and other mild, firm cheeses.

2009 The Hammer Merlot

Merlot is the second most widely planted black wine grape in the world. Most major wine-producing countries have Merlot vineyards, including Argentina, Australia, Austria, Chile, Germany, Greece, Hungary, Italy, New Zealand, South Africa, Spain, the United States, and of course France. What is the reason for Merlot’s popularity? Historically, vintners have used Merlot as a blending grape to soften a wine, usually with Cabernet Sauvignon. Merlot tannins are less forceful than Cabernet Sauvignon, so Merlot wine tends to mature earlier. it is popular because of its soft, approachable and luscious character that is appealing to new and regular red wine drinkers.

From the Wine Maker – “This wine is a good example of the smooth quality of merlot, with full-bodied and luscious texture. 100% Merlot from Sonoma County and Dunnigan Hills.”

This Merlot should be served with soups that contain hearty vegetable stews, chicken stock with meats, hearty meat-based stews or meat stock with vegetables.
