2013 Rodney Strong Cabernet Sauvignon

From the winemaker – “Our 2013 Sonoma County Cabernet Sauvignon is rich with dark cherry, plum and baking spices. The delicious fruit is accompanied by crushed violet and black pepper notes. 2015 Horse Heaven Hills H3 Columbia Crest Cabernet Sauvignon

The vineyards in Horse Heaven Hills are the source and inspiration behind the H3 wines. The hills have been home to the Columbia Crest winery for more than two decades, and it is this heritage, combined with innovative winemaking and vineyard knowledge, that allow our winemaker to create wines that capture the unique terroir of the region.

From the winemaker – “This bold Cabernet opens with flavors of black cherries and blackberries with a touch of currants and vanilla, complemented by earth and mineral notes. Deep berry flavors lead to a soft tannin cocoa finish.”

Pairs well with cornish game hens, duck or turkey prepared in rich, hearty or heavy sauces or hard cheeses like Parmigiano or Romano and firm cheeses like Cheddar.

2008 Conn Creek Anthology

This great red blend is made up of  66% Cabernet Sauvignon from, 12% Malbec, 11% Merlot, 7% Petite Verdot, and 4% Cabernet Franc. Grapes were sourced from nearly all of Napa Valley’s appellations.

From the winemaker – “Berries, violets, allspice and freshly baked pastry unite in an offering reminiscent of berry pie. The aromatic potpourri prominently features bright cherry flavors and sandalwood-tinged cocoa spice. Handsomely sculptured tannins showcase the mouth-watering fruit compote in the long, lingering finish.”

This wine goes well with pork chops cooked in a variety of ways, even spicy, or BBQ spare ribs. Firm and savory cheeses like Cheddar.

2009 Avalon Merlot

Packed with deep, dark berry fruit and nuanced hints of cocoa, herb and earth with a soft structure, this Merlot is made from 88% Merlot, 6% Syrah, 5% Cabernet Sauvignon, and 1% Petite Verdot.

From the winemaker – “Our 2009 Merlot shows its depth with a rich garnet color. Aromas of juicy boysenberries and cherry pie fill the glass. Crème brulee and brown sugar notes from oak aging compliment the ripe berry aromas. Mountain fruit characteristics show in the intensity of the fruit flavors. The entry enjoys sweet notes of raspberry and cherry with a finish of jammy boysenberry preserves. The oak notes of chocolate and wood smoke pair with and compliment the rich fruit layers. Refined tannins support this balanced wine that doesn’t show the typical alcohol component found in many Merlots. As the wine develops in the glass, one may enjoy ongoing berry notes, a touch of allspice evolving in the middle, while the wine continues to lengthen on the finish. Smooth, silky and profound berry flavors confirm this wine’s birthplace as Napa Valley.”

This vintage pairs nicely with rack or leg of lamb, lamb chops, roast pork, pork chops or tenderloin, veal with heartier vegetable and/or bean sauces or mushroom and/or wine sauces. Cheeses like Parmigiano, Romano and other hard cheeses as well as cheddar and other savory, firm cheeses.

2012 Edna Valley Cabernet Sauvignon

Edna-Valley-Cabernet-SauvignonIt is smooth as velvet but with a bold central character, seamlessly blending dark berry flavors with smidges of coffee and chocolate. The grape is prominent, but so are the ripe tannins that yield complexity and a classic long finish.

From the Wine Maker – “Our Edna Valley Vineyard 2012 Cabernet Sauvignon is medium-bodied in a classic style with ripe dark fruit flavors complemented by hints of dusty vanilla, leather, anise and cocoa powder. This wine has a balanced acidity and finishes with fine, firm tannins. We blended about seven percent Merlot this year to soften the palate and enhance the texture of the mouthfeel.”

Great with beef, duck or veal dishes or a bleu cheese. Other flavors that go well with this bottle are dark chocolate, mustard, paprika, rosemary, thyme, cloves, ginger and nutmeg.

2009 MontGras Reserva Cabernet Sauvignon – Syrah

Slightly high-toned, with cherry and violet notes laced with hints of anise, vanilla and dill. Blended from 50% Cabernet Sauvignon, 50% Syrah.

From the Wine Maker – “Deep cherry red. Ripe aromas of plum and cherry with a hint of vanilla. Berry, spice and cocoa flavors fill the palate, leading to a soft and supple finish.”

Perfect match with chicken, seafood, turkey, light pasta entrées and hard cheeses.

2008 Thorn-Clarke Terra Barossa Shiraz

This wine is firm, wrapping its chewy tannins around a core of tobacco-accented cherry and spice flavors. Medium-body fruit jello candy, hollow mid-palate, shortish cocoa-chocolate fruity plum finish.

From the winemaker – “Deep red color. The wine is deep and rich smelling with dark fruits, plums and spice with some good oak. There is very rich fruit on the palate with plums, blackberry and sweet spice from the oak. The palate is vibrant and young with a flavorsome viscous mouthfeel which will develop complexity with time. There are some slightly chewy tannins which will soften with time and there is great length of fruit flavor.”

Amazing with a full range of fish, Calamari in tomato sauce, crab cakes, grilled fish like Halibut, Monkfish, Mahi mahi, Red Snapper, Salmon, Shark, Swordfish or Tilapia.

2005 Cakebread Cellars Merlot

Due to the early start to the season and its late conclusion, the grapes for this 2005 Merlot, which includes 22% Cabernet Sauvignon and 2% Syrah, enjoyed a long hang time on the vines, developing concentrated flavors at moderate sugar levels.

From the Wine Maker – “Our 2005 Merlot offers a constellation of bright fruit aromas keyed on fresh black cherry, blueberry and plum, with fragrant scents of rose petal, tea-leaf, tobacco and cocoa adding interest and complexity. On the compact, supple palate, vibrant cherry, blackberry and cassis flavors are enlivened by a zesty black-tea spiciness that segues into a long, cocoa-tinged finish. Delicious now, this rich, firmly structured Merlot will soften and develop further nuance with 2-3 years’ additional bottle age.”

Grilled Filet Mignon with Mushroom and Avocado Salsa

2 1/2 lbs. Beef Filet, preferably from the head or middle of the filet
1 head garlic
1/4 c. Olive Oil
2 sprigs Rosemary, chopped
Salt & Pepper
2 c. Dried Morels, soaked
2 cloves Garlic, minced
8 oz. Tomatillos
2 Avocados
2 T. Cilantro, chopped
1 Lime
2 oz. Queso fresco, crumbled

Preheat oven to 400°F. Cut the pointed end of the garlic off to expose all the cloves. Place in the middle of a sheet of foil. Drizzle with one tablespoon of olive oil. Wrap in foil to seal and place in the middle of the oven to roast for about an hour until the garlic is soft. Remove and when cool enough to handle, squeeze out the pulp and mix with the remaining olive oil and chopped rosemary.

Clean the beef filet of any fat and connective tissue. Cut into two 3″ sections across the grain of the meat. Holding a large knife parallel to the cutting board, cut the filet lengthwise to form thin steaks, about a ¼” thick. Place in a shallow dish and rub with the roasted garlic mixture. Refrigerate and allow to marinate for at least two hours.

To make the salsa, soak the morels in warm water for twenty minutes until soft. Drain and rinse to rid them of any dirt. Cut into small pieces and sauté in a small skillet with two tablespoons of olive oil. Once mushrooms start to brown, add the garlic and cook for another minute, reserve. Place a small saucepan of water over high heat. Once water comes to a boil, add the tomatillos and cook for 5 minutes. Drain and run under cold water. Roughly chop the tomatillos and avocado. Combine with the morel mushrooms and cilantro in a mixing bowl. Season with a squeeze of lime juice and salt and pepper.

To serve, remove the meat from the refrigerator and season with salt and pepper. On a very hot grill sear the steaks for thirty seconds to a minute per side. Serve with pinto beans, top with a spoonful of the salsa and garnish with the crumbled queso fresco.

2008 McManis Family Vineyards Cabernet Sauvignon

With lots of dark berry fruit, the palate has a richness and density that is supported by mouth coating soft tannins and a milk chocolate oak finish.

From the Wine Maker – “The 2008 Cabernet Sauvignon has a purple-red color with good depth and bright youthful hues. The aromas feature ripe blackberries, fresh boysenberries and plums. The wine’s bouquet delivers cocoa powder, hazelnuts with a hint of smoke. On the pallet, flavors of succulent juicy olallie berries and creamy vanilla predominate and are joined by a waft of juniper. The flavors are supported by well integrated tannins that contribute to a long, smooth, and elegant finish.”

2009 Chateau Montlun Bordeaux

This classic Grand Vin De Bordeaux is a smooth, rich, medium-bodied delight. It has aromas of raisins, plums and blackberries and flavors of dark fruits and cocoa with fresh acidity.

From the Wine Maker – “An excellent value in inexpensive red wine, this cuvee is fashioned from a blend of Merlot, Cabernet Sauvignon, and Cabernet Franc. Medium bodied. Aromas of raisins, plums and blackberries. Lovely berry fruit intermixed with cedar, barbecue smoke, earth, and espresso is followed by a round yet firm tannins.”

Great with chicken and goose liver pates, veal, pork, vegetable or poultry pates, cheeses such as blue cheeses like Gorgonzola or Maytag, hard aged cheeses like Asiago, Parmesan and Reggiano, semi-hard cheeses like Mild Cheddar, Fontina, Gouda, Jarlsberg and Swiss, soft rind cheese like Brie and Camembert.
