2011 Martin Ray Cabernet Sauvignon

Martin-Ray-Cabernet-SauvignonAll of our Sonoma County Cabernet was harvested early in the cold mornings, then destemmed and moved to small, open top stainless steel tanks. There it fermented at moderate temperatures and macerated on the skins for an extended period of time. The wine was pressed off, settled 2 days and then racked to barrels for malolactic fermentation. This Cabernet spent 14 months aging in oak barrels and in tank; 45% new oak was used, half of that being American and half French oak.

From the Wine Maker – Classic aromas of ripe cherry, pipe tobacco, cedar, spice and cola lure the taster to candied cherry flavors, finishing with soft leather and rich blackberry and plum.”

2013 Alamos Cabernet Sauvignon

Alamos-Cabernet-SauvignonFrom the winemaker – “Deep and rich, our Alamos Cabernet Sauvignon expresses dark berry characteristics that are complemented nicely by slight herbal notes. Oak aging lent complex layers of brown spice and vanilla and a firm tannic structure to this wine.”

This wine pairs nicely with Roast Beef, steak, steak prepared with dark and hearty sauces or red wine sauces, beef stew, short ribs, Beef Stroganoff and Beef Wellington.

2011 Stags Leap Artemis Cabernet Sauvignon

A perennial favorite on restaurant wine lists, Artemis is generous in flavor and velvety in texture. Mainly comprised of Cabernet Sauvignon 90%, a 7% Merlot,2% Syrah, and 1% Petit Verdot finish this wines big bold blend.

From the winemaker – “Textbook Cabernet Sauvignon aromas and flavors of black cherry, blackberry, cedar and forest floor get a boost of complexity from hints of rosemary, gentle fresh herbs, baking spice and vanilla caramel. The wine is deep, dark and intense, yet also signature Stag’s Leap Wine Cellars: medium-full-bodied, firmly structured, powerful yet elegant, and with a long, succulent finish.”

Enjoy this wine with braised short ribs on a cold winter’s night or with a porcini and gorgonzola burger for you gourmet grillers.

2005 Chateau Les Grandes Mottes Bordeaux

This bordeaux is a blend of Cabernet Sauvignon and Merlot. It is soft and smooth with red and black fruits, minerals and cedar on the finish. Rich and balanced, this is a great example of classic claret.

From the Wine Maker – “Deep cherry in color, it has an earthy smell. It’s a medium bodied wine with ripe cherry and black tea flavors. There’s also a strong tannic structure that you get full blast if you swish it around a while before swallowing.”

This wine pairs nicely with lamb, cornish hen, duck, turkey, roast sucking-pig, quail, pheasant, venison or meat-based stews. or cheeses like Parmigiano, Romano, Cheddar.

2009 Chateau Montlun Bordeaux

This classic Grand Vin De Bordeaux is a smooth, rich, medium-bodied delight. It has aromas of raisins, plums and blackberries and flavors of dark fruits and cocoa with fresh acidity.

From the Wine Maker – “An excellent value in inexpensive red wine, this cuvee is fashioned from a blend of Merlot, Cabernet Sauvignon, and Cabernet Franc. Medium bodied. Aromas of raisins, plums and blackberries. Lovely berry fruit intermixed with cedar, barbecue smoke, earth, and espresso is followed by a round yet firm tannins.”

Great with chicken and goose liver pates, veal, pork, vegetable or poultry pates, cheeses such as blue cheeses like Gorgonzola or Maytag, hard aged cheeses like Asiago, Parmesan and Reggiano, semi-hard cheeses like Mild Cheddar, Fontina, Gouda, Jarlsberg and Swiss, soft rind cheese like Brie and Camembert.
