2010 St. Francis Cabernet Sauvignon

The wine’s firm structure, generous tannins, and depth of color complement classic aromas and flavors of ripe black currant, cassis, dusty cocoa and saddle leather. Fruit for our Sonoma County Cabernet Sauvignon comes from our estate vineyards in Sonoma and Russian River valleys, as well as from growers in Sonoma County’s other top appellations, including Dry Creek Valley, Alexander Valley and Rockpile. Each carefully selected vineyard contributes distinctive and individual qualities to the finished wine.”

This wine goes well with dishes like Point Reyes Blue Cheese Crostini or cheeses like Gruyere or Goat.

Comprised of Grenache (60%), Syrah (20%), Carignane (10%), and Cinsault (10%), this garrigue-scented red can be savored over a period of two days alongside your favorite savory meals.

From the winemaker – “In the bottle, this wine is a bright ruby-red.  Blackcurrant and elderberry aromas make an elegant bouquet.  On the palate, flavors of cherry and blackcurrant are concentrated and full.  The tannins are silky and the finish is rounded out with a touch of spice and pepper.”

Best served with wild game dishes like wild boar, or pheasant.

2008 TAIT The Ball BusterThis wine is Soft, velvety and generous with its tobacco-accented plum and brown sugar flavors, lingering on the supple, spicy finish. It is a blend of 77% Shiraz, 11% Cabernet Sauvignon, and 12% Merlot.

From the winemaker – “Deep Black Purple. Intense aromas of blackcurrant, stewed plums, cherry, and chocolate. Full-bodied berry palate with a sweet long-lasting finish.”

This wine pairs nicely with Wild game meats like; squab, pigeon, dove, pheasant, venison (deer), buffalo, boar and ostrich or Hard, savory cheeses like Parmigiano, Romano and Cheddar.
