2007 Giovanni Rocca Barolo

All the most prestigious and earthly areas and zones of the Langhe belong to the family for three generations, and they have kept their form and position throughout the years.

From the winemaker – “The pure cherry flavor is framed by mineral and tobacco accents and stern tannins in this linear red. Shows fine balance and builds to a long finish.“

2007 St. Supéry Cabernet Sauvignon

From the winemaker – “Luxurious, rich and concentrated aromas of black cherry, currant and blueberry are just the start of this 2007 Estate Cabernet Sauvignon. The harmonious flavors of black cherry, anise and plush cassis explode through your mouth. This classic Napa Valley Estate Cabernet is elegant and wonderful young but also has everything it needs to age beautifully.”

Shitake Mushroom & Fontina Crostini

Ingredients

3 tablespoons olive oil
½ lb. Shitake mushrooms – stems removed, cut into
¼”dice
1 cup Fontina cheese – coarsely grated
¼ cup shallots – finely chopped
2 garlic cloves – peeled and minced
1 teaspoon fresh thyme leaves
¼ cup St. Supéry Cabernet Sauvignon
1 tablespoon parsley – finely chopped
1 teaspoon Kosher salt
Freshly ground black pepper
1 baguette of bread

Directions

Heat the oil over medium heat in a large sauté pan. Add the shallot and garlic and cook until soft but not browned. Add the mushrooms, thyme, wine and salt. Cook until the liquid has evaporated and the mushrooms are tender – about 15 minutes. Adjust the seasonings and stir in the parsley.

For the crostini:

Cut twelve slices from the baguette diagonally – slices should be about 3/8” thick and about 4” long. Place slices on a baking sheet and brush the tops with olive oil. Bake in a 350° oven until golden brown.

To serve: Top each crostini with the mushroom mixture and sprinkle with the Fontina cheese. Place back in the oven and bake until the cheese is melted. Serves 4 as an appetizer.

2007 St. Clement Merlot

Dense ruby-red in color, this wine explodes with fruit aromas of ripe black plum and black cherry together with hints of coffee and vanilla.

From the winemaker – “This Merlot opens with aromas of ripe raspberry and cassis. The palate follows through with bright flavors of cranberry and cherry and underlying clove with a smoky, oak finish. The grapes for this Merlot were fermented in a combination of open and closed top fermenters to maximize concentration and extraction in the final blend. Each lot was aged separately in 100 percent French oak (40 percent new) for 19 months before blending and bottling.”

This vintage should be served with soups that contain hearty vegetable stews, chicken stock with meats, hearty meat-based stews or meat stock with vegetables. Desserts, anything with chocolate!

2007 Chateau Ste Michelle Cabernet Sauvignon

2007 Chateau Ste Michelle Cabernet SauvignonThis Cabernet has a nice aroma of black cherries and a hint of dried currant. It has a slightly berryish complexity and good fruit coming through which makes it a drink now Cabernet.

From the winemaker – “Our winemaking goal with the Columbia Valley Cabernet is to highlight concentrated Washington red fruit in an accessible style. The 2007 bottling is made in a slightly riper style with beautiful jammy fruit. Syrah (15%) was added to the blend for sweet fruit character, while a touch of Malbec provided bright tannins. The 6% Merlot contributed structure.”

Great with beef, duck or veal dishes or a bleu cheese. Other flavors that go well with this bottle are dark chocolate, mustard, paprika, rosemary, thyme, cloves, ginger and nutmeg.

2007 Antinori Chianti Classico Riserva Tenute Marchese

From the Wine Maker – “An intense ruby-red with aromas of blackberries and cherries under spirits along with sensation of spice and tobacco from the careful aging in barrel. On the palate the wine is very solid with notes of vanilla and chocolate, supple and soft in its tannins and accompanied by the vibrant acidity which characterizes the Sangiovese grape as a variety. The complexity and length on the finish are excellent.”

This Chianti should be served with meat cannelloni, meat/tomato sauce gnocchi, meat or vegetable lasagna, pepperoni/sausage pizza, meat, spinach or cheese filled ravioli in meat or tomato sauce.

2007 Pepperwood Grove Chardonnay

This vintage is comprised of 77% Chardonnay, 10% Chenin Blanc, 8% Pinot Grigio and 5% Viognier varietals. Pepperwood Grove wines are produced by Don Sebastiani and Sons who strive to produce quality wine at an approachable price, regardless of the outcome of a particular growing season.

From the winemaker – “This chardonnay shows an intriguing array of aromas from vanilla bean and toasted hazelnuts, to lemon Verbena. Crisp flavors of green apple and biscotti contrast with hints of grapefruit, toasted marshmallow, and fresh lime on the finish. A bit of aging on American Oak, adds depth and complexity furthering this wine’s broad stylistic appeal.”

You can pair the Pepperwood Grove Chardonnay with grilled halibut topped with a grapefruit salsa, or a half-dozen barbequed oysters.
