While the high daytime temperatures allow for complete ripening, it’s the low night temperatures that create the thickening in the skins producing the aroma and flavor precursors that winemakers the world over search for. The Sunnybrook Ranch in southeast Paso Robles is situated on rolling hills with southern exposures offering early morning warming, protection from drying afternoon winds and cold nights slowing sugar accumulation, increasing tannins and flavor compounds resulting in extended hang time and delaying harvest until late November!
Three different fermentation techniques were used to enhance different characteristics from each of the vineyards used. The upright pumpover tanks extract aromatics and allow for softer tannins producing a perfumey fruit forward wine. The Rotary fermenter maintains skin contact resulting in a wine with deeper color and richer tannins while the cone-sweep tanks are used to remove pips allowing for more time on the skins without developing bitter components.
From the winemaker – “In the mouth, Bridlewood Cabernet Sauvignon yields a noticeable sweetness upfront from the notes of dark fruit, chocolate and caramelized sugar, but finishes with a surprising firmness. We chose to blend about eight percent Syrah for added layers of red berry flavors and a touch of Petite Sirah to enhance the dark fruit characteristics and create a plush mouthfeel.”
