Handpicked at the peak of flavor development, this 2011 Josh Cellars Cabernet Sauvignon was barrel aged in new American oak and 1-2 year old French oak for 16 months. All of the grapes from this Red Hill mountains vineyard have been organically grown and sustainably farmed for the past 10 years.
From the Wine Maker – “Rich, aromatic dark fruits and baking spices delight the nose, yielding fresh plum and blackberry fruit, violet, dried fig, vanilla bean and Chinese Five-Spice. The wine is juicy with the plum and blackberry flavors prominent, layered with smoky and sappy maple wood, roasted almonds and hazelnuts, finishing long with fine, firm tannins.”
Pairs well with cornish game hens, duck or turkey prepared in rich, hearty or heavy sauces or hard cheeses like Parmigiano or Romano and firm cheeses like Cheddar.
