The grapes for our 2011 Cabernet Sauvignon were harvested in mid-October at peak ripeness and cold soaked for 36 hours to ensure fruit with intense but polished tannins. Fermentation occurred at a maximum temperature of 92°F for up to 10 days to encourage the development of jammy aromas and flavors and to create a full body. Following fermentation, we blended the wine with Merlot to add a layer of finesse to the powerful architecture of the Cabernet Sauvignon grape. The finished blend was carefully fined to round out some of the edges, while maintaining the full structure of Cabernet.
