The fruit for this wine came from vineyards in St. Helena and Oakville, both of which produce intensely flavored Sauvignon Blanc. The wine was fermented in stainless steel tanks at very cold temperatures and stabilized so that it did not undergo malolactic fermentation to retain the year’s bright acidity and minerality.
From the Wine Maker – “This Sauvignon Blanc begins with Red Delicious apple aromas followed by cantaloupe, custard and white flowers. The palate bursts with citrus and is crisp with medium acidity with lingering notes of pineapple, pink grapefruit and white confectionary flavors.”
Great with lobster, crab, shrimp, spicy or cajun flavored shrimp, scallops with light to medium sauces. Cobb, chef, pasta, shrimp, lemon-herb and Caesar salads.
