Big fruit, black, red and purple color mixed with silky tannins and a floral bouquet scent make this wine more generous and fruit oriented with continued airing. The incredible depth and complexity of this wonderfully balanced wine, while its nose is dense and concentrated, mingles nicely with its exotic brown spices, oak and earthy minerals. This bottle will age well over the next few years making it a must have for your cellar, but decanting it will also reveal a great drinking wine which lies just below its reserved exterior.
A wonderful match for simply prepared ultra-fresh Pacific salmon, Portugese-style goat cheeses, raw-milk blue cheeses, or any number of cheeses from Sonoma dairies.
