			<content:encoded><![CDATA[<p><img class="alignright size-full wp-image-4415" style="border:0 currentColor;" title="Edge-Cabernet-Sauvignon" src="http://srliquor.files.wordpress.com/2012/05/edge-cabernet-sauvignon.jpg?w=500" alt=""   />EDGE is a lush, complex Cabernet Sauvignon produced from grapes which were carefully selected from the great old vineyards in the Silverado Trail area of Napa Valley. The winemaking process follows traditional French winemaking practices with techniques including the use of cold soaking and extended maceration (averaging 23 &#8211; 32 day), and frequent pumping over. The 2009 vintage was aged in both French and American Oak for fifteen months, and barrels were racked once every six months.</p>
<p>From the winemaker – <em>“This supple and lush wine immediately opens to flavors of blackberry, clove and hints of vanilla. The medium bodied palate is balanced with flavors of eucalyptus, sweet plums, ripe cherry and hints of tobacco, while the finish is accentuated by nice acidity and subtle oak flavors.”</em></p>

A portion of this wine underwent malolactic fermentation to soften the mouthfeel.</p>

			<content:encoded><![CDATA[<p><img class="alignright size-full wp-image-4481" style="border:0 currentColor;" title="Vogelzang-Sauvignon-Blanc" src="http://srliquor.files.wordpress.com/2012/05/vogelzang-sauvignon-blanc.jpg?w=500" alt=""   />The Sauvignon Blanc is fermented in neutral Chardonnay Oak for 10 months from harvest to bottling in June of the following year. The vineyard chooses to use wild yeast in the white wines because each yeast carries with its own nuances and flavors. The texture of the wine is increased through this process. The Vogelzang Vineyard Sauvignon Blanc is an Estate Wine, taken from the mature, planted in 1998. The grapes in this Sauvignon Blanc are harvested from two different blocks of different clones. It is made up of 75% Sauvignon Blanc 1 and 25% Sauvignon Blanc Musque. The Sauvignon Blanc 1 clone contributes the minerality and the Musque clone the more floral, light tones. The whites do not go through malolactic and are filtered before bottling.</p>
<p>From the winemaker – <em>“The Birdsong Sauvignon Blanc is all about fun. We have some exciting young Sauvignon Blanc vineyard blocks that show great promise and are providing us with fruit offering fresh aromatics of spring flowers, bright citrus, and flinty minerality. We have departed a bit from our traditional winemaking by using some tank fermentations that preserve the youthful fruit and keep the palate light and approachable.”</em></p>

			<content:encoded><![CDATA[<p><img class="alignright size-full wp-image-4389" style="border:0 currentColor;" title="Coho-Headwaters-Red-Wine" src="http://srliquor.files.wordpress.com/2012/05/coho-headwaters-red-wine1.jpg?w=500" alt=""   />Sometimes adversity has a way of turning a difficult situation into something extremely positive. The story of COHO Headwaters certainly is an example of that “lemons into lemonade” thing you always hear about. For the first three vintages COHO made a delicious 100% Cabernet Sauvignon wine entirely from fruit grown in the Coombsville section of Napa Valley, just east of downtown Napa.</p>
<p>In the middle of harvest in 2005 the warehouse where our finished wines were stored was set on fire. Sadly we lost our entire inventory and were effectively out of business for a year until we could bring the wines safely aging in barrel at our winemaking facility to market. To complicate the situation, the Michael Black Vineyard, which normally produces very small amounts of Merlot fruit, doubled its output due to the extremely long, cool growing season. Not wishing to produce all that wine into a single vineyard Merlot, the decision was made to blend a goodly portion of the Merlot fruit with several tons of Cabernet Sauvignon grapes that friends had given us (the generosity of the wine industry) into a new red blend that we named Headwaters.</p>
<p>Starting with the 2006 vintage, the Headwaters blend transitioned to a Coombsville area Cabernet Sauvignon dominated wine with about 30-35% Merlot, and seasoned with Petit Verdot. The fruit sources remain predominately from Coombsville, with the likeliness that future vintages will incorporate some fruit from select Napa Valley appellations and introduce other Bordeaux varietals into the blend.</p>
<p>From the winemaker – <em>“Coho Headwaters Napa Valley Red Wine is a &#8220;Bordeaux blend&#8221; of three varieties: Cabernet Sauvignon (66%); Merlot (32%); and 2% Petite Verdot. Most of the source vineyards for this wine are in the &#8220;Coombsville&#8221; area of the Napa Valley. This &#8220;terroir&#8221; provides deep and opaque red color, supple red cherry/wild berry and cassis fruit, and toasty oak on the nose, which then continues to deliver the same fruit tones and integrated oak nuances, with great complexity of flavors and power on the palate. The supple tannins offer a silky fine-grained texture to the wine and a lingering, fruit-forward finish.”</em></p>
<p align="LEFT">Best served with panna cotta &amp; fresh fruit; summer fruit with turbinado sugar; simple cookies such as langue de chat, or almond biscotti.</p>

<p>From the winemaker – <em>“<em>Nice green apple, pear and honeysuckle aromas, on the palate the wine is very well balance with wonderful acidity and texture. Green apples, pears and apricots dominate the palate with a perfect amount of creaminess to hold up to the acidity. This non-malolactic fermented chardonnay delivers a fabulous mouthful of flavors with a long finish</em>.”</em></p>
<p align="LEFT">This wine pairs nicely with rich seafood dishes, roast chicken or pasta with cream sauce.</p>

This full-bodied wine has a bold tannin structure and balanced acidity that lead to a long ﬁnish. This big wine is anything but “petite.”</em></p>
