2010 Robert Mondavi Private Selection Chardonnay

In 2010, our Central Coast Chardonnay grapes enjoyed an extended period maturing on the vine, which produced fruit with impressively concentrated flavors. The natural roundness of our Chardonnay was enhanced by partial barrel and malolactic fermentation coupled with extended aging on the yeast lees, resulting in a luscious, complex wine. The blend is made up of 98% Chardonnay, 1% Muscat Canelli, 1% Malvasia Bianca.

From the Wine Maker – “The nose reveals lemon blossom, pineapple, and peach aromas with smoky oak nuances along with enticing vanilla spice and toasty brown sugar flavors. The creamy, mouthfilling palate creates a lush impression and is balanced by a rich, lingering finish.”

Enjoy this delicious wine with rich seafood, poultry and pork dishes, white-sauce pastas – like fettuccine Alfredo, or flavorful, soft ripening cheeses.

2009 Chime Pinot Noir

This wine is dry, silky in texture and crisp in acids, showing the textural hallmarks of a fine coastal bottling. The raspberry, cherry, cola and spice flavors are delicious and complex.

From the Wine Maker – “The Chime Sonoma Pinot Noir show a dense bright purple color as well as a nose packed with cherry kirsch, white pepper spice, fresh tilled earth, and subtle vanilla wood aromas. The mouth feel is plump and loaded with savory fruit; finishing expansive and luscious.”

This wine pairs nicely with roast pork, pork chops, pork tenderloin, ham or mild sausage. Mild, firm cheeses like Swiss or Gouda.  Hard cheeses like Parmigiano or Romano and savory cheese like Cheddar.

2009 Dreaming Tree North Coast Cabernet Sauvignon

When Steve Reeder and Dave Matthews first met, they realized they had a few things in common, like a passion for making wine at least as strong as their passion for drinking it.

They set out into wine country, looking for a way to make quality wines accessible to everyone. Along the way, they found inspiration in the down-to-earth characters and unforgettable flavors that give the region its rare kind of charm.

The rhythm of our North Coast Dreaming Tree Cabernet Sauvignon highlights classic aromas of blackberry, cherry and herbal notes wrapped by toasted vanilla. Vietnamese style grilled ribs and jasmine rice

Serves 4

Ingredients

  • 2 lbs baby back pork ribs
  • 4 cups chicken stock
  • 1 cup soy sauce
  • 1 cup seasoned rice wine vinegar
  • 3 tablespoons garlic, minced
  • 3 tablespoons ginger, minced
  • 2 tablespoons hoisin sauce
  • 2 tablespoons garlic chili paste
  • 1 tablespoon Chinese five-spice powder
  • Jasmine rice (recipe below)

Directions

  1. Pre heat your oven to 300°F.
  2. Add chicken stock, soy sauce, rice wine vinegar, garlic and ginger into a sauce pan and bring to a boil.
  3. Cut ribs into two piece sections and place in one layer in an oven proof baking pan.
  4. Pour sauce over ribs and back in oven for 1 ½ hours or until meat peels from the bone.
  5. Remove ribs from pan and set aside.
  6. Pour sauce into a small pot. Cook over high heat and reduce liquid by half.
  7. Add hoisin sauce, garlic chili paste and Chinese five-spice powder. Season with salt if needed.
  8. Finish ribs on the grill regularly basting with the sauce and turning about every 7 minutes until cooked through and browned.
Serves 4
  • 2 cups Jasmine rice
  • 4 cups water
  • 1 tablespoon salt
  • 1 piece star anise
  • 3 pieces clove
  • 3 pieces cardamom pods
  • 1 tablespoon Szechuan peppercorns
  • 1 cinnamon stick

Jasmine Rice Directions

  1. Place all spices in a small sauté pan and toast over low-medium heat until fragrant about 3 – 5 minutes.
  2. Remove from heat and create a sachet to hold spice mixture using cheesecloth tied with cooking string.
  3. Place water in sauce pan, add spice sachet and bring to a boil. Add a pinch of salt.
  4. Add rice, cover pan and lower to a simmer.
  5. Cook until done about 15 – 18 minutes.

2008 Bogle Phantom Red Blend

Phantom is back…Bogle’s apparition of fierce berry and sensual spice returns to tease and tantalize. This red blend is made up of 51% Zinfandel, 47%  Petite Sirah, and 2%  Mourvèdre.

From the Wine Maker – “Notes of juicy boysenberry and black fruit are deepened with aromas of pipe tobacco and black pepper, while subtle hints of clove and vanilla softly envelop the palate. Intense and luscious, the rich character opens to reveal red fruit of spirited cranberries and raspberries. Over two years in 1, 2, and 3-year-old America oak capture and concentrate the essence of the three unique varietals, creating yet another vivid and full-bodied red wine, impossible to ignore.”

Best served with Roast, steak, hamburgers, beef ribs, brisket, Beef Wellington and beef jerky or firm and savory cheeses like Cheddar.

Rosenblum Cellars Vintners Cuvée XXXIII Zinfandel

Similar to many European wines, the Rosenblum Zinfandel Cuvée XXXII doesn’t carry a specific vintage, allowing the winemaker to create a blend that reflects his ideal wine style. The result is a well-balanced, multilayered wine that can be enjoyed immediately upon release.

From the Wine Maker – “With rich fruit intensity, our Zinfandel Cuvee XXXIII opens with a mélange of raspberry, plum, and Bing cherry aromas. Sweet mocha and vanilla spices gather around red stone fruits on the medium-bodied palate. The well-balanced acidity and fine tannins showcase the vibrancy of flavors in this accessible wine.”

A wine suited for all occasions, it pairs well with barbecued meats, pizza or pastas.

2009 Santa Cristina Chianti Superiore

The two grape varieties (95% Sangiovese, 5% Merlot) of the blend were fermented differently: the Merlot was given seven to eight days of skin contact at maximum temperatures of 79°  in order to extract only supple tannins and preserve the fruity character of the grape’s aromas, while the Sangiovese was given a longer, ten to twelve day maceration on its skins at higher temperatures, 86° which included a soft punching down of the cap of skins in order to increase the complexity of the wine’s flavors and aromas. Ageing took place both in stainless steel tanks and in oak for a total aging period of nine months, followed by a short, two months period of bottle aging before commercial release.

From the Wine Maker – “Ruby red with purple highlights, the wine features aromas of red fruit, particularly cherries and black currants, together with hints of vanilla from the aging in oak. The palate is balanced and with polished tannins, and the red fruit returns on the finish and aftertaste.”

Recipe: Crostino di Polenta e Funghi

Ingredients:
200g Polenta
800ml Water
40g Dried mushrooms
100g of Fresh pecorino Toscano
8 Slices of rustic bread 

Rehydrate the mushrooms in tepid water and chop into small pieces. Boil the water for the polenta and when ready gradually add the polenta flour along with the chopped porcini and keep stirring until ready. Once cooked, spread onto a rectangular baking pan, keeping the thickness at least 1 cm. Place the polenta in the refrigerator to cool and solidify.Cut the pecorino into small cubes. Cut the fully cooled polenta into small disks and place the cheese on top.

Place in the oven for 5 min at 180°  C and serve hot. *Every polenta has different cooking time and water/flour proportion specific to its particular brand. Consult the directions on the packaging to ensure the best result.

2010 667 Pinot Noir

2010 446 Chardonnay

Born in France, Raised in America. Not all vines are created equal. Here in California, we’ve planted a selection of these French vines exactly where they will flourish best. Single Vineyard 446 Chardonnay is named for Vine Type 4 grown in Block 46 of our San Bernabe Vineyard. San Bernabe’s cool growing season and diverse soil types add to 446 Chardonnay’s brilliant color, juicy tropical and citrus flavors and supple finish.

2010 Primal Roots Red Blend

The true essence of Primal Roots begins with the raw qualities of Merlot, Syrah, and Zinfandel that are artfully blended to create a smooth, full-bodied, sensual wine. 43% Merlot, 37% Syrah, and 20% Zinfandel make up the great blend while oak aging helps build the structure introducing the underlying vanilla, cream, and mocha characteristics.

2010 Rapido Sangiovese Puglia

A medium bodied, everyday drinking red with aromas of red berry and damson fruit. Fresh and lively on the palate with ripe berry fruit balanced by tangy acidity and soft ripe tannins leading to a warm, spicy finish. A seriously good wine that is all things Italian – made from Sangiovese grapes from selected vineyards in Puglia, southern Italy (known as the ‘heel’ of Italy).

From the Wine Maker – “A terrific everyday drinking red with aromas of red berry and plum. A very concentrated and intense ruby-red color. Fresh and lively on the palate with juicy berry fruit and a hint of spiciness, balanced by tangy acidity and soft ripe tannins. Intense aromas with touches of wild berries, hints of spices and vanilla undertones. Dense, rounded decisive flavor and excellent persistence.”

Pairs well with hamburgers, spaghetti and meatballs, grilled pork tenderloin, chili and aged cheeses.
