2007 Villa Antinori Toscana

This wine was introduced in 1928 by Marquis Niccolò Antinori, as the first Chianti ever produced suited for being aged and improving over time. In 2001, Piero Antinori launched a new step in the evolution of Villa Antinori, making it a Tuscan IGT produced with the best selection of grapes originating exclusively from estates located in Tuscany. This Italian gem is a great red blend consisting of 55% Sangiovese, 25% Cabernet Sauvignon, 15% Merlot, 5% Syrah.

From the Wine Maker – “The wine has an intense ruby-red color. It offers full and complex aromas which recall ripe fruit, plum jam, mint, chocolate, and tobacco. In the mouth, the wine presents itself with good body; it is round, with soft, velvety tannins. The finish is long and lingering, leaving hints of ripe fruit on the palate.”

This wine is an excellent companion for fish and meat carpaccios, shellfish, spicy seafood, seafood pasta and soup dishes.

2009 14 Hands Cabernet Sauvignon

Grapes were sourced from vineyards throughout Washington State, including the Horse Heaven Hills, Columbia Valley, Wahluke Slope and the Yakima Valley. Merlot,Cabernet Franc, Syrah & Petit Verdot were added to create a fruit-forward profile and enhanced mouth feel.

From the Wine Maker – “14 Hands Cabernet Sauvignon features aromas of redcurrants and raspberries with subtle hints of spice.  Spiced cherry & plum flavors are joined by notes of cocoa and complemented by fine, velvety tannins.”

2007 Silver Oak Alexander Valley Cabertnet Sauvignon

Our 2007 Alexander Valley Cabernet Sauvignon, a blend of wine from several different vineyards, is 100% Cabernet Sauvignon. We blended the vineyard lots in early 2008 and transferred the wine to 50% new and 50% once-used American oak barrels for aging. Blending prior to barreling allows us to achieve a balance of the wine’s natural elements, such as fruit and tannin, before they are influenced by oak. The wine was then aged in barrel for approximately 25 months and another 15 months in bottle to harmonize its components before release.

From the Wine Maker – “Our 2007 Silver Oak Alexander Valley Cabernet Sauvignon is a profound, fruit-driven wine from a great California vintage. It has a dark ruby color with a purple edge and an inviting nose of ripe black plum, blackberry, baking spices and soy sauce. On the palate, the wine is rich and full, reminiscent of the flavors of a berry cobbler. It has a long, fruity finish with fine-grained tannins, and is a testament to exquisite ripeness at moderate alcohol. With proper cellaring, this wine should give drinking pleasure through 2031.”

Great with wild game like squab, pigeon, quail, pheasant, venison (Deer) and buffalo or hard cheeses like Parmigiano or Romano and firm cheeses like Cheddar.

2005 Cakebread Cellars Merlot

Due to the early start to the season and its late conclusion, the grapes for this 2005 Merlot, which includes 22% Cabernet Sauvignon and 2% Syrah, enjoyed a long hang time on the vines, developing concentrated flavors at moderate sugar levels.

From the Wine Maker – “Our 2005 Merlot offers a constellation of bright fruit aromas keyed on fresh black cherry, blueberry and plum, with fragrant scents of rose petal, tea-leaf, tobacco and cocoa adding interest and complexity. On the compact, supple palate, vibrant cherry, blackberry and cassis flavors are enlivened by a zesty black-tea spiciness that segues into a long, cocoa-tinged finish. Delicious now, this rich, firmly structured Merlot will soften and develop further nuance with 2-3 years’ additional bottle age.”

Grilled Filet Mignon with Mushroom and Avocado Salsa

2 1/2 lbs. Beef Filet, preferably from the head or middle of the filet
1 head garlic
1/4 c. Olive Oil
2 sprigs Rosemary, chopped
Salt & Pepper
2 c. Dried Morels, soaked
2 cloves Garlic, minced
8 oz. Tomatillos
2 Avocados
2 T. Cilantro, chopped
1 Lime
2 oz. Queso fresco, crumbled

Preheat oven to 400°F. Cut the pointed end of the garlic off to expose all the cloves. Place in the middle of a sheet of foil. Drizzle with one tablespoon of olive oil. Wrap in foil to seal and place in the middle of the oven to roast for about an hour until the garlic is soft. Remove and when cool enough to handle, squeeze out the pulp and mix with the remaining olive oil and chopped rosemary.

Clean the beef filet of any fat and connective tissue. Cut into two 3″ sections across the grain of the meat. Holding a large knife parallel to the cutting board, cut the filet lengthwise to form thin steaks, about a ¼” thick. Place in a shallow dish and rub with the roasted garlic mixture. Refrigerate and allow to marinate for at least two hours.

To make the salsa, soak the morels in warm water for twenty minutes until soft. Drain and rinse to rid them of any dirt. Cut into small pieces and sauté in a small skillet with two tablespoons of olive oil. Once mushrooms start to brown, add the garlic and cook for another minute, reserve. Place a small saucepan of water over high heat. Once water comes to a boil, add the tomatillos and cook for 5 minutes. Drain and run under cold water. Roughly chop the tomatillos and avocado. Combine with the morel mushrooms and cilantro in a mixing bowl. Season with a squeeze of lime juice and salt and pepper.

To serve, remove the meat from the refrigerator and season with salt and pepper. On a very hot grill sear the steaks for thirty seconds to a minute per side. Serve with pinto beans, top with a spoonful of the salsa and garnish with the crumbled queso fresco.

Rosenblum Cellars Vintners Cuvée XXXIII Zinfandel

Similar to many European wines, the Rosenblum Zinfandel Cuvée XXXII doesn’t carry a specific vintage, allowing the winemaker to create a blend that reflects his ideal wine style. The result is a well-balanced, multilayered wine that can be enjoyed immediately upon release.

A wine suited for all occasions, it pairs well with barbecued meats, pizza or pastas.

2010 Rapido Sangiovese Puglia

A medium bodied, everyday drinking red with aromas of red berry and damson fruit. Fresh and lively on the palate with ripe berry fruit balanced by tangy acidity and soft ripe tannins leading to a warm, spicy finish. A seriously good wine that is all things Italian – made from Sangiovese grapes from selected vineyards in Puglia, southern Italy (known as the ‘heel’ of Italy).

From the Wine Maker – “A terrific everyday drinking red with aromas of red berry and plum. A very concentrated and intense ruby-red color. Fresh and lively on the palate with juicy berry fruit and a hint of spiciness, balanced by tangy acidity and soft ripe tannins. Intense aromas with touches of wild berries, hints of spices and vanilla undertones. Dense, rounded decisive flavor and excellent persistence.”

Pairs well with hamburgers, spaghetti and meatballs, grilled pork tenderloin, chili and aged cheeses.

2009 Henry Fessy Moulin-a-Vent Beaujolais

Andre’ — “I would imagine that my introduction to Beaujolais isn’t much different from most people. Around the third Thursday of November the Beaujolais Nouveau arrives! (Just in time for Thanksgiving). For me it was as a recent culinary school graduate. I was then and still am today, drawn into the excitement or hype surrounding an annual event. Back then the new Beaujolais was a big deal. The French government decided long ago that if you wanted to grow grapes, produce wine and sell it with the vintage listed on the label that the third Thursday of November was the absolute earliest that you could release a quality product, So the hype surrounding the release of the newest vintage was quite grand. The trip from vineyard to airport, a ride on the Concorde and then a limo into Manhattan. Which would be the first restaurant to serve the Beaujolais nouveau? Although a relatively simple wine it was good. The problem was that you were paying for that flight on the Concorde. You were paying for the hype.  As time went on, the wine became less and the media attention waned. I can remember receiving the wine a day early as long as we promised not to sell it until the correct hour. Unfortunately many people’s only taste of Beaujolais is the nouveau. A less than special wine at an inflated price. Which on an off-year can taste much like a slightly alcoholic grape juice.

The real story of the Beaujolais lies in the Cru Beaujolais. All of these wines are made from the Gamay grape. (Beaujolais is the region in which the grapes are grown) Within that region lies , from north to south  Saint-Amour, Juliénas, Chénas, Moulin-à-Vent, Fleurie, Chiroubles, Morgon, Régnié, Brouilly and Côte de Brouilly. Which brings us to the heart of the matter, Henry Fessy Moulin a’ Vent 2009. The last time I checked it’s 2011 and the vintage of this wine is 2009. Nothing nouveau about that.

This is a perfect summer red. Medium bodied with ripe cherry fruit and a touch of cola. The slight spiciness will help it stand up to almost anything that you are pulling off the grill. I tend to chill Beaujolais a bit. Don’t put it in the fridge when you get home. But, if you are entertaining let it cozy up to the whites in the ice bucket for a few minutes.

If you have never tried Beaujolais I hope you’ll give this wine a go. If you have tried Beaujolais and not been impressed, then you owe it to yourself to take this wine home tonight.”

“This wine has impressive colour and intense aromas of red and black fruits such as blackberry and blackcurrant. There are also spicy notes along with liquorice on the finish. With great balance, this is a concentrated, well-structured wine with very pleasant silky tannins.”

2008 Ghost Pines Zinfandel

Bright flavors of strawberry jam and ripe plum, and aromas of vanilla bean and mocha.

From the Wine Maker – “Sourcing from both the Sonoma and San Joaquin appellations allows our winemaker to blend a wine which accentuates the best of what each region has to offer. Try with roast, steak, hamburgers, beef ribs, brisket, Beef Wellington or beef jerky. Hard cheese like Parmigiano or Romano.
