2007 Villa Antinori Toscana

This wine was introduced in 1928 by Marquis Niccolò Antinori, as the first Chianti ever produced suited for being aged and improving over time. In 2001, Piero Antinori launched a new step in the evolution of Villa Antinori, making it a Tuscan IGT produced with the best selection of grapes originating exclusively from estates located in Tuscany. This Italian gem is a great red blend consisting of 55% Sangiovese, 25% Cabernet Sauvignon, 15% Merlot, 5% Syrah.

From the Wine Maker – “The wine has an intense ruby-red color. It offers full and complex aromas which recall ripe fruit, plum jam, mint, chocolate, and tobacco. In the mouth, the wine presents itself with good body; it is round, with soft, velvety tannins. The finish is long and lingering, leaving hints of ripe fruit on the palate.”

This wine is an excellent companion for fish and meat carpaccios, shellfish, spicy seafood, seafood pasta and soup dishes.

2007 Cakebread Cellars Zinfandel

The Red Hills appellation of Lake County is prime Zinfandel country, and there’s no better site for it than Snow’s Lake Vineyard, whose 2,000-foot-plus elevation make it a unique growing site in  Lake County.  We have three distinctive clones of Zinfandel planted at Snow’s Lake, including heritage selections from Mendocino and Amador counties and a Primitivo clone.  The vines are rooted in magnificent, red volcanic soils and enjoy a perfect southwestern exposure.  Warm sunny days and nights cooled by breezes from nearby Clear Lake provide ideal conditions for California’s heritage grape variety.

From the Wine Maker – “Our 2007 Red Hills Lake County Zinfandel is perhaps a bit more open at this stage of its development than our three previous vintages.  Its scented, almost floral nose of fresh strawberry, red cherry and blackberry fruit also boasts intriguing milk chocolate, wild herb and cracked pepper scents, creating a marvelously complex bouquet.  On the full-bodied, smoothly textured palate, the wine’s mouthfilling cherry, raspberry and blackberry flavors mingle with pronounced briary spice, rich chocolate and toasty oak tones to create a delicious taste experience. While the forward fruit and supple tannins of this youthful Zinfandel make it delightful to drink now, especially with hearty, spicy fare, it will age well for another 3-5 years.”

This wine could be enjoyed when eating grilled meats or chicken. Also try with spicy dishes, and medium cheeses.

2007 St. Francis “Old Vines” Zinfandel

Zinfandel is sometimes referred to as California’s own grape variety. Prized by Italian immigrants arriving in California in the early 1900’s, it was a popular choice for making their families traditional rich hardy style dry red wine.

From the Wine Maker – “The grapes for our 2007 Old Vines Zinfandel program must meet certain criteria to be included in this classic California wine. The vines must be at least 50 years old; many are as old as hundred years old. Because of their age, these plots yield less than two tons per acre of exceptionally concentrated fruit. Many of these vineyards have Petite Sirah and Alicante Bouschet planted among the Zinfandel adding texture and color to what is called a “field blend”. This distinct “old world style” Zinfandel displays deep aromas of ripe black cherries and boysenberries laced with licorice, shadowed by spicy toasted oak notes that carry into a long luscious finish.”

Try this great Zin with roast, steak, beef ribs, brisket, Beef Wellington or beef jerky. Hard cheese like Parmigiano or Romano.

2007 Three Saints Pinot Noir

The Dierberg Vineyard is situated atop a sandy loam mesa above the South Bank of the Santa Maria River. The ranch features a series gently rolling hills and soils that are uncharacteristic of the growing area. The higher loam content and slightly heavier texture of our soil tends to produce Pinot Noirs that are more powerful in structure and more savory in flavor-profile than is typical for the Santa Maria Valley.

From the Wine Maker – “Our most overtly fruity and exuberant Three Saints Pinot to date, the 2007 shows bright blackberry, crushed raspberry and subtle black tea notes. On the palate the wine is both vibrant and luxuriously rich, with decadent creamy blackberry flavors underpinned by satiny tannins and a blast of fresh acidity. Although our 2007 Three Saints Pinot will age well for up to three years, it would be a shame not to drink it now for its almost primal sense of gratification.”

A great complement to wild salmon. Also try with roasted duck, grilled lamb, mushrooms, and medium cheeses.

2007 Silver Oak Alexander Valley Cabertnet Sauvignon

Our 2007 Alexander Valley Cabernet Sauvignon, a blend of wine from several different vineyards, is 100% Cabernet Sauvignon. We blended the vineyard lots in early 2008 and transferred the wine to 50% new and 50% once-used American oak barrels for aging. Blending prior to barreling allows us to achieve a balance of the wine’s natural elements, such as fruit and tannin, before they are influenced by oak. The wine was then aged in barrel for approximately 25 months and another 15 months in bottle to harmonize its components before release.

From the Wine Maker – “Our 2007 Silver Oak Alexander Valley Cabernet Sauvignon is a profound, fruit-driven wine from a great California vintage. It has a dark ruby color with a purple edge and an inviting nose of ripe black plum, blackberry, baking spices and soy sauce. On the palate, the wine is rich and full, reminiscent of the flavors of a berry cobbler. It has a long, fruity finish with fine-grained tannins, and is a testament to exquisite ripeness at moderate alcohol. With proper cellaring, this wine should give drinking pleasure through 2031.”

Great with wild game like squab, pigeon, quail, pheasant, venison (Deer) and buffalo or hard cheeses like Parmigiano or Romano and firm cheeses like Cheddar.

2007 Josh Cellars Cabernet Sauvignon

Handpicked at the peak of flavor development, this 2007 Josh Cellars Cabernet Sauvignon was barrel aged in new American oak and 1-2 year old French oak for 16 months. All of the grapes from this Red Hill mountains vineyard have been organically grown and sustainably farmed for the past 10 years.

From the Wine Maker – “A forward, complex blend from select vineyard blocks, this wine is redolent with ripe fruit and offers layers of black currant and spicy, berry fruit flavors with gentle oak nuances.”

Pairs well with cornish game hens, duck or turkey prepared in rich, hearty or heavy sauces or hard cheeses like Parmigiano or Romano and firm cheeses like Cheddar.

Summers 2008 Le Nude Chardonnay & 2007 Adrianna’s Cuvee Cabernet Sauvignon

Paired with Smoked Duck Ham, pineapple & puree of white beans.

Andre’ — “The two wines in this post come from Summers Estate Wines. The first is the 2008 Chardonnay, “La Nude” a reference to the fact that it is produced without any oak barrel aging. As much as I love a buttery oaky California Chard, many of them are overdone. The La Nude is rich and mouthfilling, well-balanced with bright acidity and a lingering tropical fruit finish.

The second wine 2007 Andriana’s Cuvee’ is a dynamite Cab and at this price I think a great value as well. Nice spice and berry fruits with soft green tannins this is a medium to full-bodied cab that has a lot to offer.

Now the challenge, come up with one dish that pairs well with both wines. I am serving it to a few hundred people at An Evening of Wine and Roses. My first thought as I tasted the chardonnay was to use duck breast as a starting point. The meat wouldn’t overpower the white but it still has enough flavor to stand up to the Cab. As I have said before when you are pairing food and wine the pairing is more about the garnishes than the center of the plate. I decided to turn the duck breast into a smoked duck ham. Add a touch of sweetness and play off the fruit flavors in the La Nude with a pineapple chip, and finish off the plate with a puree of white beans. The smokyness in the duck and earthiness of the beans mirroring some of the flavors in the Adriana’s cuvee’.”

“The 2008 Le Nude Chardonnay possesses a pale straw color with tropical fruit aromas, finishing with crisp pear flavors. The 2007 Cabernet Sauvignon Andriana’s Cuvee is a bright red fruit wine with smoky oak aroma that leads to a mouthful bursting with blackberry and spicy tones.”

The Le Nude Chardonnay was given a 88 point rating & the Adrianna’s Cuvee Cabernet was given a 89 point rating  by Wine Advocate.

2007 Ghost Pines Merlot

Employing dual County appellation sourcing for Ghost Pines Merlot 2007, our winemaker was able to blend a wine which accentuates the best of what Napa and Sonoma Merlot has to offer. Napa County Merlot provides lush, jammy, ripe fruit into the blend in a free-spirited manner. The Sonoma County Merlot adds fresh red and black fruits along with a strong structural foundation in a disciplined manner. The result is a wine that exhibits the best of both appellations.

From the Wine Maker – “Our Merlot displays aromas and flavors highlighted by fresh blackberry and deep red jams along with subtle nuttiness, dried oats and sweet toast.”

This wine is best served with soups that contain hearty vegetable stews, chicken stock with meats, hearty meat-based stews or meat stock with vegetables.

2007 Ghost Pines Chardonnay

Ghost Pines 2007 Chardonnay possesses expressive fruit-forward characters, the result of sourcing only Premium fruit from three of California’s most recognized Chardonnay appellations: Sonoma, Napa and Monterey Counties. Modern winemaking techniques allow this wine to express characters of baked apple, pear and lemon cream accented by an elegant and sweet vanilla finish.

This wine is best served with Mahi Mahi, Salmon, Shark, Swordfish, and Tuna sautéed, grilled, roasted or baked with or without sauces. Semi-hard cheeses like mild Cheddar, Fontina, Jarlsberg, Swiss or Gouda, soft rind cheeses like Brie.

2007 Pacific Rim “Vin de Glaciere” Riesling

Paired with Apple Crisp, Black Raspberry Sauce.

Andre’ — “This wine is consistently bright and fresh upon release. The 07 is aging well and has more pronounced flavors of dried apricot and honey. I think it is a great introduction to sweet, or as I like to say sticky wines. Some would put this in the Dessert wine category. It is also fantastic early in the meal with some pate’ or cured meats, or with a carmelized onion soup. For the event at St. Joes with the Growing Stage we are pairing it with the Apple crisp. The combination of flavors, apple, black raspberry and sweet riesling is electrifying. So, about that recipe. Slightly altered this is my Grandmothers Crisp Topping.

1 cup flour

1 cup brown sugar

8 ounces Butter cut into small pieces

Mix all of this together with your hands until it resembles a fine meal. Add

1 cup old-fashioned rolled oats

pinch of salt and cinnamon.

put this topping over prepared fruit and bake at 400 until golden brown.

From the winemaker:

“The Pacific Rim Vine de Glaciere is made from Riesling grown at the Selenium Vineyard, picked at about 22.5% sugar; the grapes are then frozen to concentrate the juice. The resulting wine is sweet with pear, melon, mango and honey notes and a kiss of horseradish-like spice and earthy clove. Riesling’s natural acidity helps balance the sugar.”
