2010 Apothic White Winemakers Blend

Apothic, named for the mysterious place, Apotheca, where vintners stored their most coveted concoctions in 13th century Europe, Apothic blends fuse Old World intrigue with modern sophistication. The grapes for Apothic White were pressed and allowed to settle before racking. The must was fermented in upright tanks at cool temperatures to maintain and enhance the natural aromas and flavors. A portion of this wine underwent malolactic fermentation to soften the mouthfeel.

From the Wine Maker – “Our Apothic White is an approachable blend that combines three full-bodied varietals of Chardonnay, Riesling and Moscato to create a luscious wine in the bold style of Apothic. The intense flavors of peach, pineapple, honey and vanilla spice make this smooth wine unforgettable.”

This wine pairs deliciously with fruit salad, sushi, white fish (snapper, grouper, scallops), as well as Cantonese, Thai, and Latin cuisines.

2010 Alamos Red Blend

Made primarily from Malbec (Argentina’s signature red grape), Bonarda (Argentina’s second most widely planted red grape), and Tempranillo, the Alamos Red Blend displays deep, ripe flavors of blackberry and plum with layers of brown spice. The Alamos vineyards of Mendoza, Argentina lie in the foothills of the Andes Mountains. Alamos wines are born of the intense mountain sunlight and pure snowmelt water of the Andes, and embody the richness of this rugged, remote region. This great red blend is made of 40% malbec, 18% tempranillo, 14% bonarda, 14% cabernet sauvignon, 7% petit verdot, 7% syrah.

Gil Lempert-Schwarz, Las Vegas Review-Journal– “This wine is immediately powerful, yet rounded, with spicy cherry juice, elderberry juice, concentrated sloe fruit crush, pomegranate pits, earthy references and other pungent black fruit concoctions. It eases off on the midpalate with soft, supple tannins that, although very present, are finely balanced, and then finishes with a big earthy fruit kick, invoking freshly crushed elder fruit to the end.”

Enjoy with baked, barbecued, broiled or roasted chicken, Chicken Cacciatore, chicken in mushroom or red wine sauce, chicken marinated in herbs and grilled.

2007 Villa Antinori Toscana

This wine was introduced in 1928 by Marquis Niccolò Antinori, as the first Chianti ever produced suited for being aged and improving over time. In 2001, Piero Antinori launched a new step in the evolution of Villa Antinori, making it a Tuscan IGT produced with the best selection of grapes originating exclusively from estates located in Tuscany. This Italian gem is a great red blend consisting of 55% Sangiovese, 25% Cabernet Sauvignon, 15% Merlot, 5% Syrah.

From the Wine Maker – “The wine has an intense ruby-red color. It offers full and complex aromas which recall ripe fruit, plum jam, mint, chocolate, and tobacco. In the mouth, the wine presents itself with good body; it is round, with soft, velvety tannins. The finish is long and lingering, leaving hints of ripe fruit on the palate.”

This wine is an excellent companion for fish and meat carpaccios, shellfish, spicy seafood, seafood pasta and soup dishes.

2008 Lagar de Robla Premium

The 2008 Lagar de Robla Premium is made with 100% Mencía grapes produced by old vines in the region of Bierzo with an average age of 50 years. This big red spent 18 months in American oak and a year in the bottle before its release.

From the Wine Maker – “The 2008 Lagar de Robla Premium Mencia spent 18 months in American oak. It is the most complex of these Mencia offerings displaying density, opulence, and length. This pleasure-bent effort can be enjoyed now but will drink well for a decade.”

Best paired with various roast dishes, Spanish stew, mushrooms and grilled meats. Blue fish, rice, short-and medium-cured cheeses.

2010 Twomey Sauvignon Blanc

Our 2010 Twomey Sauvignon Blanc is a single vineyard wine. The fruit is sourced from our estate vineyard surrounding our winery in Calistoga. Although this is a continental climate with little maritime influence, the proximity to the Napa River creates a cool microclimate that is ideal for growing aromatic white varieties. The vineyard is planted to a mixture of Sauvignon Blanc clones from California and France. A dry-farmed field selection, planted in 1980, delivers great richness and depth to the blend. Our vineyard is sustainably farmed.

From the Wine Maker – “Our 2010 Twomey Napa Valley Sauvignon Blanc has a light straw-yellow color and a dynamic nose of honeydew melon, citrus blossoms, white jonquil, guava, custard apple and pie crust. It has beautiful acid balance, great mouthfeel without heaviness and a long clean finish redolent of lime zest and mascarpone.”

Enjoy with a crab salad, smoked salmon,  or Oysters Au Gratin. Cheeses such as brie, swiss or gouda.

2007 St. Francis “Old Vines” Zinfandel

Zinfandel is sometimes referred to as California’s own grape variety. Prized by Italian immigrants arriving in California in the early 1900’s, it was a popular choice for making their families traditional rich hardy style dry red wine.

From the Wine Maker – “The grapes for our 2007 Old Vines Zinfandel program must meet certain criteria to be included in this classic California wine. The vines must be at least 50 years old; many are as old as hundred years old. Because of their age, these plots yield less than two tons per acre of exceptionally concentrated fruit. Many of these vineyards have Petite Sirah and Alicante Bouschet planted among the Zinfandel adding texture and color to what is called a “field blend”. This distinct “old world style” Zinfandel displays deep aromas of ripe black cherries and boysenberries laced with licorice, shadowed by spicy toasted oak notes that carry into a long luscious finish.”

Try this great Zin with roast, steak, beef ribs, brisket, Beef Wellington or beef jerky. Hard cheese like Parmigiano or Romano.

2010 Chateau Ste Michelle Gewurtztraminer

From the Wine Maker – “A fan favorite, this Gewürztraminer is an enjoyable wine with exuberant fruit and clove spice. This is a lush style of Gewürztraminer with a lot of floral character, yet it still maintains the grape’s natural crisp character. Try this with Thai food or any cuisine with a little “bite” to it.”

Warm Scallop Salad:

INGREDIENTS
1 Tbsp olive oil
24 Sea Scallops
Sea salt & freshly ground pepper, to taste
7 cups Salad Greens
Orange-Riesling Sauce, recipe follows
Orange segments, for garnish
Candied ginger, for garnish

INSTRUCTIONS
Heat a saute pan over high heat, and coat the bottom with olive oil. Dry the scallops with a paper towel, and place in the hot pan. Saute about 3-4 minutes depending on size of scallops. Season lightly with salt & pepper; set aside.

Place the greens on individual salad plates and top with warm scallops. Drizzle the sauce over the scallops and garnish with orange sections and slivered candied ginger.

2007 Silver Oak Alexander Valley Cabertnet Sauvignon

Our 2007 Alexander Valley Cabernet Sauvignon, a blend of wine from several different vineyards, is 100% Cabernet Sauvignon. We blended the vineyard lots in early 2008 and transferred the wine to 50% new and 50% once-used American oak barrels for aging. Blending prior to barreling allows us to achieve a balance of the wine’s natural elements, such as fruit and tannin, before they are influenced by oak. The wine was then aged in barrel for approximately 25 months and another 15 months in bottle to harmonize its components before release.

From the Wine Maker – “Our 2007 Silver Oak Alexander Valley Cabernet Sauvignon is a profound, fruit-driven wine from a great California vintage. It has a dark ruby color with a purple edge and an inviting nose of ripe black plum, blackberry, baking spices and soy sauce. On the palate, the wine is rich and full, reminiscent of the flavors of a berry cobbler. It has a long, fruity finish with fine-grained tannins, and is a testament to exquisite ripeness at moderate alcohol. With proper cellaring, this wine should give drinking pleasure through 2031.”

Great with wild game like squab, pigeon, quail, pheasant, venison (Deer) and buffalo or hard cheeses like Parmigiano or Romano and firm cheeses like Cheddar.
